Notes: Pasos
1.- Lavar y desinfectar equipo: olla, cuchara, fermentador, auto-sifón, marguera, tapón, air lock, termómetro.
2.- Añadir a la olla 6.5 litros de agua purificada.
3.- Ablandar o calentar un poco la miel para verterla mas fácil en la olla.
4.- A partir de que comienza la ebullición restaría 1 hora de cocción.
5.- Una vez terminada la ebullición enfriar a 40 C° con el serpentín o chiller.
6.- Tomar muestra y dejar enfriar para medir densidad Inicial (OG).
7.- Traspasar el mosto al fermentador, agregar la levadura y revolver muy bien.
8.- Dejar fermentar aproximadamente 10 días (o hasta dejar de ver actividad de fermentación).
9.- Tomar muestra para medir densidad final (FG) para calculo de ABV.
10.- Embotellar con las cantidades de azúcar indicada y dejar reposar 3 semanas.
11.- Probar una muestra y tomar notas y observaciones. |

Notes: Glem alt du vet om Meksikansk Cerveza. Dette settet leverer himmelhøyt over de tynne butikkvariantene som kjøpes på blanke flasker. Dette er en real tørsteslukker på varme dager. Det gjelder bare å brygge nok, for denne vil bli populær også blant de i husstanden som tror at de ikke liker øl
Har tilsatt litt risskall for å sikre at skyllinga ikke skal klogge.
Dryss tørr gjær i 10 ganger sin egen vekt av sterilt vann ved 23C ± 3C tilsatt gjærnæring VLN1000. Når tørrgjæren er omdannet til krem (dette tar ca. 15 til 30 minutter), start forsiktig omrøring i ytterligere 30 minutter. Hell deretter gjærslurryen i gjæringskaret.
Safale anbefaler 100 g tørrgjær
Gjæres på 10-12 C i 14 dager
Øk temperatur gradvis til 15-16 C i ytterligere 7 dager
Overfør til kegs for lagring. Lagres kaldt (2 gr) i 6 uker. Karboner til 2.6 vol.
Eller overfør til flasker. Bruk 6-7 g/l sukker til karbonering. Hold i romtemperatur i 10 dager. Deretter 6 ukers kald lagring.
Alternativ gjæringsforløp:
Dag 1: Kjøl ned vørter og tilsett gjær på 10°C. Hold denne temperaturen til neste steg.
Dag 3: Øk temperaturen til 13°C
Dag 4: Øk temperaturen til 17°C
Dag 5: Øk temperaturen til 19°C
Dag 7: Senk temperaturen til 5°C (Cold Crash)

Notes: RAMPA 1: INICIAR na temperatura de 58ºC, derrubar o Malte e manter 30 minutos temperatura 54ºC. desliga-se o fogo e deixe o caldeirão tampado de repouso nos próximos 30 minutos, sem mexer o mosto durante este período. Esta etapa também é chamada de parada protéica, melhora a durabilidade da espuma.
RAMPA2: nesta receita iremos iniciar a etapa da Beta-Amylase com 65ºC. Durante esta etapa estaremos produzindo a maltose, extraindo o máximo de açúcares (amido) do malte. É fundamental mexer o mosto com ajuda de uma colher de plástico ao menos 50% do tempo, isto deverá ser feito para não queimar o fundo da panela, pois com certeza irá trazer um sabor desagradável no resultado final da cerveja. Em torno de 60min teremos extraído o máximo em maltose possível. Fundamental é controlar a temperatura que não poderá oscilar muito, devendo sempre ficar em torno dos 65ºC (de 63 a 68ºC).
