Fermentation - pitch at 46 or 48, keep below 50. Diacetyl rest probably not needed. At secondary, near freezing. 32 to 35 range. "Get a better lager character the closer you get to freezing". Let it sit 6 to 8 weeks at lagering temp. Decent after 1 month.
If yeast has not fully flocculated, add gelatin, or transfer to another keg. Needs to be clear, sparkly.

Notes: This is a modified clone of the historic New Albion Ale, starting with the recipe printed in Brew Your Own, Jan/Feb 2013, and adjusting it per former owner Jack McAuliffe's recollection, and per Don Barkley's comments.
Targets: OG = 1.055; FG = 1.011; IBU = 30; SRM = 4; ABV = 5.7%
Barkley is a former New Albion brewer who still has McAuliffe's original recipe notebook. Barkley re-brewed the beer in 2009. WLP076 yeast is the original yeast for New Albion, which is still used by Mendocino Brewing Co., and is contained in tiny amounts in Red Tail Ale (can be harvested if you have several bottles). It is not available in 2015, and you can substitute WLP013 (London Ale), Wyeast 1028 (London Ale), or Danstar Nottingham
The original malt was an earthy Bauer & Schweitzer Pale Malt, provided by Anchor Brewing. Barkley suggests 50 % Great Western 2-row and 50% Gambrinus Pale Ale.
Hops started as Bullion hops, then switched to Northern Brewer, then finally wound as Cluster for bittering and Cascade for flavor and aroma by 1977, per Barkley. |

Não utilizei o liquidificado na ultima brassagem, somente amassados com um garfo e apesar dos problemas para escoar o mosto o resultado foi ótimo. Indicando que as ameixas influenciam pouco no aroma e sabor da cerveja.
A Cerveja ficou leve, muito fácil de beber leve maltado com aroma e sabor suave de frutas passas. Perfeito.

Notes: Raisin, Dates, and Honey:
Honey should be added with dates and raisins along with molasses. Recipe pending.
Oak Chips should be left for no more than 3-4 days. Taste regularly to validate completion.
Vanilla beans were prepared by cutting the length of the bean, and gutting the pulp, and then cutting the bean into small subsections. Then, both the bean and the pulp were placed in a small sterilized container with grain alcohol for 5 days. After 5 days, the entirety of the container was poured into the beer and it was left to sit for 4 days. It should be left for much longer as the vanilla flavor disappeared over time, perhaps tossed in at bottling.
Lactose was added to the beer 1 month before bottling. The lactose sugars were boiled in water for 15 minutes, and then tossed into the final product during racking. The lactose was stirred into the beer. This process is best done at keg application or bottling where the beer will not rack off the lactose sugars for maximum effect.

Notes: 1/2 tsp calsium sulfate (2 g) as water treatment.
reason: adding Ca+2(calcium) lowers ph and aids enzyme activity. Adding SO4-2(sulfate) accentuates hop bitterness. Ideally I would add 1/4 tsp (1g) Calcium cloride, but I did not have any available on brew day. Cloride would accentuate maltiness. |
