Notes: Washed yeast from primary fermentor of batch #4. Kept in fridge for 1 week and made starter 27 hours before pitching into #5 batch. 1.6L starter with nearly 1 cup DME and pinch of yeast nutrient.
First all grain batch. Briar will be brewing after mash.
Preboil gravity at 1.035 at 95F
OG was 1.050
I used 1 gal too much water on 2nd batch sparge. 3.5g, 2.5g, 2.5g would've worked out perfect for the beer. Maybe this is why I was .006 lower on OG than recipe called?
1/16/15 - Bubbles in airlock have stopped two days ago. Fermenting consistently at 61-64F in closet wrapped in 2 towels. |

Notes: you can use any yeast, they say use Conan Yeast but you can't buy it so any British style yeast will do
you will need 400 billion cells of yeast so 4 packets dry or 2 with a good 1.071 starter
Split dry hop in half and add half on day 14 and day 21. Carb on day 25.

Notes: This is the re-brew of a Pils that placed 3rd in the 2018 NHC first round in San Diego. The goal was something similar to Ayinger's Bavarian Pils. This beer was lucky enough to place 1st in the 2018 NHC Final Round.
Note: the Pils malt used in this recipe is Weyermann Barke Pils. Give it a try.
Additional fermentation/lagering notes: with the high pitch rate this beer completes primary fermentation (aka gravity stabilizes) in less than 10 days at which point you can keg it. On about day 7 or 8 I let it rise to a maximum of 62F to make sure it gets to terminal gravity. I lagered it in my keezer at 38F for 4-5 weeks, but if the brewday and fermentation went well it will taste very good sooner than that. If you use gelatin as I do it will taste great by 2 weeks in the keg. |

"...An alternative approach is to ferment initially using a clean Saccharomyces strain such as Wyeast 1056, White Labs WLP001, or US-05, and then rack to secondary and add a strong mixed culture of Brettanomyces, Lactobacillus, and Pediococcus. If you use this alternate method, Jay recommends mashing at 155°F (68°C) for an hour to ensure that enough residual sugars remain for the mixed culture to consume during aging." |
