Notes: Actual OG was 1.090. I used two packs of yeast to give it a healthy fermentation. Primary fermentation : 1 week so far, planning on 3/4 weeks. Then dry hop in the secondary for another 10 days. 2/15 racked to secondary for dry hop, SG was 1.021
Done done and done. Tastes amazing. Nice bone-white head. Full body and nice hoppiness that you would expect from a black IPA

Notes: 2 lb Apple Juice = 2 gallons Apple Juice
Boil yeast nutrient and lemon juice in 2 cups water. Take off heat and steep tea for 10 minutes. Cool and add to fermenter with apple juice and yeast.
Primary for 4-6 weeks.
Bottle condition 3 weeks.
Very clear and pale in color. Very dry with a nice apple tartness and slight yeast esters.
maybe add 4 ounces Stevia to backsweeten |

Cool to 65 Pitch Nottingham let ferment 10 days at 65, Rack to Secondary for 14 days at 65.
Brewers note: To get the sourness of guiness. 1 Week before brewing put 24oz of Guiness in a bowl and sit it on the counter for 4 days to get sour. Freeze until brew day, On brew day remove and thaw. When there is about 30 mins left in your brew put the sour guiness on the stove and boil it for 10 mins then add it to flameout on your brew.
Brewers note two: Remember when brewing this beer that you will not get the creaminess of Guiness unless you have Nitrogen Injection. However the Taste is spot on. Enjoy

American chocolate malt was chocolate rye
actual OG was 1.064
added cherries at 1.032
checked gravity on 6/1, only down to 1.030, going to ferment for another week and check again. Taste was slightly tart, not as much mouthfeel as I'd like. |

Notes:
Fermentation - pitch at 46 or 48, keep below 50. Diacetyl rest probably not needed. At secondary, near freezing. 32 to 35 range. "Get a better lager character the closer you get to freezing". Let it sit 6 to 8 weeks at lagering temp. Decent after 1 month.
If yeast has not fully flocculated, add gelatin, or transfer to another keg. Needs to be clear, sparkly.

Cold Steep Grains At the following:
1/2 lb - Chocolate
3/4 - Belgian Biscuit
3/4 - Roast Barley
1 - 1/4 - Caramunich American 60°
steeped in 2 gallons of cold water with 1/4 camden tablet added
