Notes: Mash all grains for 1 hour at 150 degrees.
Sparge at 170 degrees.
One hour boil with hop regimen above.
Chill down to 50F and pitch yeast.
Ferment for about 10-14 days until primary fermentation just finishes.
Diacetyl Rest: Raise beer temp to 62-65F for 2-3 days.
Rack to keg or secondary and start cold-aging process. If possible taper temperature down 5-7 degrees per day from Diacetyl rest to 35F. Cold age at 35F for 5-6 weeks. |

| Notes: Mash in 6 quarts of water at 152. Sparge with 1 1/2 gallons of 170 degrees water, bring to a boil. Boil volume should be 2 3/4 gallons, add water if needed. Boil for 1 hour, add hops per schedule. Cool, transfer to fermenter, top off water to 2 1/2 gallon total, measure O.G., pitch yeast, ferment for 1 week at 65-70 degrees. I used 1 gallon of tap water, the balance of water was distilled water. I am shocked how US05 yeast really worked on this one, fermenting was complete in less than 3 days and the F.G. was lower than expected @ 1.006. Bottled 8-11-12. Initial taste was very smooth and flavorful. This would benefit from dry hopping to increase hop aroma. Drank two of these 8-24-12, crystal clear, nice flavor but will change hops next time to either Hallertau or Saaz. |

| Notes: Brew steps are the same as Raspberry Wheat notes without the fruit. Secondary fermentation is up to you. It’s seems like a good idea to move it off the yeast cake after aggressive fermentation is done (after first 2-3days). |

| Notes: Had to really mess with the temp this time and probably added an extra gallon of strike water. When it go to 151 I just let it stay there because I was over it. Temp dropped 3 degrees over the hour mash and I didn't do a mash out because I forgot. Didn't realize that the calculator was measuring the final gravity of the brew so I threw in some extract. Probably wasn't necessary but oh well. |

7 lbs. Two-row Pale
3 lbs. Munich
1 lb. Carapils/Dextrin
1 lb. Crystal 60L
12 oz. Special B
2 oz. Chocolate
.75 oz. Centennial 60 minutes
.5 oz. Cascade 30 minutes
.5 oz. Hallertau 5 minutes
.12 oz. Cinnamon stick - 5 minutes
1 oz. freshly grated orange peel - 5 minutes
1.2 oz. freshly grated ginger root - 5 minutes
Mashed in at 154 for 60 minutes. Batch sparge.
I tweaked a recipe from ChemE just a little to increase the ABV. I just finished one of these, and I have to say that this is probably the best beer I've made to date.

Notes: Ferment in primary for 7 days and transfer to secondary and let fermentation complete. Add Gelatin 3 days prior and cold crash in fridge to clear up beer.
The beer shows coffee brown with a creamy beige head. The nose is an interesting blend of malt and spicy hops leading on to a creamy, medium-bodied palate with a lot of malt, but the hops come in to balance it. The finish is the perfect blend of malt and hops.
This beer is mouthwatering with a hearty beef and vegetable soup.
Enjoy this one! |
