Mill the grains and mash at 148°F (64°C) for 30 minutes. Vorlauf until the runnings are clear, then run off into the kettle. Sparge and top up as necessary to get about 6.5 gallons (25 liters) of wort—or more, depending on your evaporation rate. Boil for 90 minutes, adding boil hops according to the schedule. After the boil, stir to conduct a whirlpool, adding the correct amount of ambient-temperature water to hit target gravity and bring down the wort temperature to 192°F (89°C). Whirlpool with hops for 10 minutes, then allow 15 minutes to settle. Chill the wort to 66°F (19°C), aerate well, and pitch the yeast. Ferment at 68°F (20°C).
Once fermentation slows, rack off of yeast or drop yeast out of the conical, transfer to a sanitized and CO2-purged container, and add dry hops at 68°F (20°C). Once the beer clears diacetyl tests (see “Hunting for Diacetyl,” beerandbrewing.com), crash to 28°F (-2°C) for 3 days. Then package and carbonate to desired level. |

Notes: All my friends and family loved this one. Definately one to try.The IBU seem high, but magnum is very smooth and balances perfectly. Bottle condition for at least a month. My FG came out to 1.019.
Oats, milk sugar, and a hint of coffee makes one good breakfast of champions.
Age this for a few months and it gets even better.
Made it again.. Same recipe, same awesome beer. Going to submit to a local homebrew contest..
Update; This baby got me the first place trophy! 1st out of 14 entries in a local homebrew contest. Stuff is fantastic |

Notes: Mash grains for 45-60 mins then pour hot water over BIAB to sparge off excess sugar.
Mash temp 158f. Higher levels give a less fermentable wort and a more full-bodied beer.
Roast Cocoa nibs at 300 for 10-15 minutes.
Add cocoa nibs, dark bakers chocolate and first addition of coffee at flameout. You can skip this coffee addition for a more balanced or less coffee flavored beer. Then maybe only do .5oz coarse ground coffee in secondary.
Filter off hops, coffee, cocoa into fermenter.
After ferment rack onto coarse ground coffee for 7 days. Coffee can be soaked overnight in vodka.
Coffee Must be coarse!
I boil about 1/4 gallon every 15 mins in a 4 gallon (16 quart) kettle so it took me an hour to boil off 1 gallon. I adjusted recipe to start with 2 gallons.
Head Retention: It's possible oils from the cocoa or coffee beans can reduce head retention. Choose dry beans. Or soaking them in vodka can help.

| Notes: Mash in 6 quarts of water at 152. Sparge with 1 1/2 gallons of 170 degrees water, bring to a boil. Boil volume should be 2 3/4 gallons, add water if needed. Boil for 1 hour, add hops per schedule. Cool, transfer to fermenter, top off water to 2 1/2 gallon total, measure O.G., pitch yeast, ferment for 1 week at 65-70 degrees. I used 1 gallon of tap water, the balance of water was distilled water. I am shocked how US05 yeast really worked on this one, fermenting was complete in less than 3 days and the F.G. was lower than expected @ 1.006. Bottled 8-11-12. Initial taste was very smooth and flavorful. This would benefit from dry hopping to increase hop aroma. Drank two of these 8-24-12, crystal clear, nice flavor but will change hops next time to either Hallertau or Saaz. |

| Notes: clean and drinkable but according to judges, is a little thin compared to style. Recommend adding an additional pound of DME and maybe a little carafoam to add body and mouthfeel. Many stout junkies at local home brew shop very much enjoyed this one, didn't recommend any changes unless I was to enter it in competition. |

| Notes: Had to really mess with the temp this time and probably added an extra gallon of strike water. When it go to 151 I just let it stay there because I was over it. Temp dropped 3 degrees over the hour mash and I didn't do a mash out because I forgot. Didn't realize that the calculator was measuring the final gravity of the brew so I threw in some extract. Probably wasn't necessary but oh well. |
