Notes: FOR FIVE GALLON BATCH (2.5 gallon batch sizes in parentheses)

Boil
(2) 4 cinnamon sticks at 10 min
(4 Tbsp) roasted Hatch peppers at 10 min
(2) 4 oz cocoa powder at 0 min

Primary
1 vial of ClarityFerm

Secondary
(1) vanilla bean
(2) 3 cinnamon sticks
(3.5) 7 oz cacao nibs
(2 Tbsp) 4 Hatch peppers

Making a New Mexican version of a killer beer style. How's it New Mexican? I'm using Hatch chiles instead of seranno peppers. Also, because I'm a gringa, am halving the pepper content--I can't take the heat.

Made gluten-free (or gluten-removed) for the Wife.

From the original recipe: "My inspiration for this idea is a Mexican hot chocolate. Sweet chocolate and cinnamon taste with a hint of spiciness from the cayenne. I used bakers chocolate melted in a cup of water in this batch because the first one tasted a bit chalky when i used cocoa powder. i also used Zimbabwe Bird peppers not Seranno but they are close on the Scoville scale."

Notes: Would be category 31, alternative fermentables beer - subcategory 31A, alternative grain beer... but listing it here as a English Barleywine to get the numbers in a similar ballpark (English Barleywine, or even Wheatwine - with oats instead of wheat, would be base style).

Bake half or all of flaked oats in oven if want to add a toasted oat flavor (just keep an eye on them - can burn easily).

I BIAB, so I’m not worried about a stuck sparge, but I’d add rice hulls if you are, with this much oats. The Beta-Glucanase rest helps reduce this as well.

Can use hops of your choice, but I’m aiming for British varieties... First Gold, Target, or Fuggles would also work.

Lots of options for yeast - want good attenuation and some fruity esters, so Kölsch or an attenuative English Ale yeast such as WLP007, Wyeast 1028 London Ale, 1098 British Ale, 1318 London Ale III, 1335 British Ale II, 1450 Denny’s Favorite 50, 1728 Scottish Ale, or other dry yeast equivalent. Grists with high percentages of oats have been shown to produce more diacetyl than barley, so slowly raise (2°/day) fermentation temp after 3-4 days active fermentation, to around 68-70 for a diacetyl rest.

Age on oak if desired. Cold crash and gelatin fine before packaging.

Notes: Washed yeast from primary fermentor of batch #4. Kept in fridge for 1 week and made starter 27 hours before pitching into #5 batch. 1.6L starter with nearly 1 cup DME and pinch of yeast nutrient.
First all grain batch. Briar will be brewing after mash.
Preboil gravity at 1.035 at 95F
OG was 1.050
I used 1 gal too much water on 2nd batch sparge. 3.5g, 2.5g, 2.5g would've worked out perfect for the beer. Maybe this is why I was .006 lower on OG than recipe called?
1/16/15 - Bubbles in airlock have stopped two days ago. Fermenting consistently at 61-64F in closet wrapped in 2 towels.

Notes: Do not use Wy 3522 Ardennes yeast. Sparge with 9.5 Gallons RO. Collect 12.5 gallons. Note 2 Orval dregs in each 5 gallon secondary. Use Orval that has been stored at room temp not refrigerated. Bottle into Champagne bottles using 3oz bottling sugar/5 gallons. Brett will work for years to carbonate. (First batch way way over carbonated with 7oz per 5 gallons) Target IBU is around 25 to 30. The Dry hop with Styrian Goldings is essential. Original recipe calls for Perle bittering hops but I have found Perle are way to harsh.

Notes: This is a modified clone of the historic New Albion Ale, starting with the recipe printed in Brew Your Own, Jan/Feb 2013, and adjusting it per former owner Jack McAuliffe's recollection, and per Don Barkley's comments.

Targets: OG = 1.055; FG = 1.011; IBU = 30; SRM = 4; ABV = 5.7%

Barkley is a former New Albion brewer who still has McAuliffe's original recipe notebook. Barkley re-brewed the beer in 2009. WLP076 yeast is the original yeast for New Albion, which is still used by Mendocino Brewing Co., and is contained in tiny amounts in Red Tail Ale (can be harvested if you have several bottles). It is not available in 2015, and you can substitute WLP013 (London Ale), Wyeast 1028 (London Ale), or Danstar Nottingham

The original malt was an earthy Bauer & Schweitzer Pale Malt, provided by Anchor Brewing. Barkley suggests 50 % Great Western 2-row and 50% Gambrinus Pale Ale.

Hops started as Bullion hops, then switched to Northern Brewer, then finally wound as Cluster for bittering and Cascade for flavor and aroma by 1977, per Barkley.
