Pineapple, citrus and papaya; single-hopped with Simcoe, Hoppy Christmas is an anti-festive IPA, redolent with summery flavours. Small caramel malt additions provide a touch of malt complexity. Notes: Almost opaque, dark brown when held up to the light.
Smells like chocolate, cold-brewed coffee, and dark bread crust. Not roasty.
Tastes malty, mostly dry, and cocoa-y. Slight hop spiciness.

I like this better than Köstritzer, but not as much as Krombacher Dark. |

Notes: This recipe was inspired by Ross Harms and a Fruity Pebbles Brew. It's part of a "Cereal Killer Challenge" within the brew club and just a fun "Raw Beer" recipe to play with. Below are the notes and guidelines I am using for this brew day as well.
(This recipe uses 3 box's @ 580g/each)
Notes from Ross Harms Fruity Pebbles Brew
-mix crushed grain, hops, cereal, and rice hulls in a bucket.
-I mashed at 149°f for 1 hour with 1.25qt per lb
-I heated the full volume of sparge water to 185°f
-Instead of doing a traditional mash, I actually treat the sparge water like a giant mash out and add add the full volume to the mash tun.
-It is important that the contents of the mash tun hit a temperature between 161°and 170°. If you are less than this the wort will likely not be pasteurized. If you are higher than this you may start to produce DMS. I shoot for 166°.
-Hold this temp for 15 minutes
-I sanitize my kettle and chiller during this time.
-Transfer and chill to pitching temp in your sanitized fermenter.

Notes: Split batch - 5.5 gallons Kolsch ale yeast, 5.5 gallons Belgian (Wyeast 3655).
Kolsch - 2L starter + Clarity Ferm. This half gets the fridge. Start on the cool end for 4-5 days, bump up to finish out, then cold crash for a couple of weeks.
Belgian - 2L starter, but keep 500ml aside. Pitch at 65F, then allow to free-rise at cellar temp.
We will need Fermcap for this one before the boil. |

Notes: Approximately 1/2 cup organic peanut butter in 2 cups vodka, should evaporate to approx. 1 cup vodka. Start at primary, and then strain any remaining peanut butter and add vodka to secondary. It can really sit in secondary as long as you'd like.
Note that OG is relatively low, but the jelly additions will bump it up to the 1.050 +/- 0.05 range. |

Notes: Take 3 oz of medium-toast oak cubes. Soak them in bourbon for 2-4 weeks. Then add to the secondary for 1-2 weeks before bottling. Taste before kegging - add more bourbon if desired.
On kegging day:
Purge the keg with CO2.
Start racking the beer.
Heat up 1/4 pound Grade B maple syrup and add to the keg while you're racking into it. Mix well.
You may decide to add more maple syrup to taste.
Keep the keg cold so that the syrup doesn't ferment. |

I love this yeast it came out nicely. I brewed the same recipe again but fermented at higher temps and it was awesome lots of farmhouse funk.
