Notes: 1st attempt at a brown ale using harvested chestnuts - make sure it's the spiky ones! Horse chestnuts aren't meant to be eaten
Gonna cut an X on the chestnuts and then roast on some BBQ coals. Crush and separate into shells and inner nut . Put the flesh into a processor and blitz
Add the nut shell in a hop bag during mash and add the blitzed flesh along with the malts
This is an experiment I don't know how much. if any fermentable sugar will be released by the chestnuts - My SG should show that
From reading it's worth adding the shells to get some more smokey notes
Also adding in some roasted Cacao nibs 1/2 lightly roasted, 1/2 darker roasted - should help balance the sweet chestnut
125g - 20 mins at 127 C
125g - 20 mins at 157 C
The malt extract is just to bump up the abv a little as it's going to be a Christmas beer. Northdown hops for the dry hop stage came from helping with our local breweries harvest, adding in just because! |

Notes: A rich, spicy Christmas Ale based on an English Brown Ale recipe with seasonal additives.
Cinnamon and ginger go in (bagged) for full length of the boil.
Honey and treacle go in for last 5 mins of the boil at the same time as
the secondary spices.
Sprinkle yeast on top of the aerated wort, leave for 30 minutes, then stir in vigorously.
Ferment for one week at 21 then raise the temp to 23 for the second week to draw out the fruity esters we want for this brew. |

Notes: Just another _ _ _ _ _ _ _ easy beer recipe. Ease of brewing is what makes good consistent beer. Also Experimentation and refining the processes as adapted to your environment. I brew in buckets in a house that stays pretty much 68-71F all summer. So Ales are easy here in the summer. Winter is a different story,having only wood heat,placement of the fer minter is crucial. Winter is a lager time for me,but they take too long so I put more fer- minters into service and still make Ales. P.S.I am brewing these ingredients today. August 31 2015 |
