Notes: Batch #1 - 29/7/18
- Gladfield Med Crystal (0.45kg) in for Crystal 40 (0.57kg)
- Added 2kg ale malt to add ABV and body but not much flavour.
- Rolled oats added for body, mouth feel and head retention.
- Chocolate malt (145g) upped to 200g total split light/dark.
- No Whirlfloc to try and keep body.
- No starter used.
13/8/18 - SG: 1020, tastes of sweet chocolate, FG is a bit higher than expected maybe use a starter next time.
- Added 2 vanilla pods soaked in bourbon for months.
16/8/18 - FG: 1020, tastes freaking great, dark chocolate flavours, cold crashed.
18/8/18 - Carbed and kegged, 30psi for 2min 20sec.
8/9/18 - Tasting great, lots of chocolate flavour, not too sweet, perfect body for the ABV, very positive feedback. I will make this again, maybe throw some flavours at it.

Notes: Mash as usual. Boil for 10 minutes. Cool wort to 105. Add Good Belly Probiotic (Lacto). 16 oz (1/2 carton) Cover pot with plastic wrap and lid. OK to cool to room temp - 72%. 24-48 hours until pH gets to 3.4 - 3.5. Taste to confirm acidity. Then run typical boil with hops, etc.
Freeze, thaw, then crush in sanitized bowl/blender 3.5 lbs of blackberries. Add berries to secondary fermentation for 7 days. |

Notes: Aiming for something like Hobgoblin Gold. If not a little more citrusy.
Using left over crusts (4 slices or 180 g) Toasted and torn and added to the mash. Whole meal malted and seeded bread.
Using Citra for my primary aroma and flavour hop. Casacde will provide most of the bittering. I usually go for First Wort Hop additions for this bittering purposes, but, in my next brew a NEIPA. I will be using only later additions, so this is a kind of trial run with this.
I will have 4 litres of chilled water in the fermentor to reduce the bitterness this time. If need be I have 2 more litres to adjust the volume to 20 litres.
Post boil size actually 12 litres. 6 litres chilled spring water added, plus 3 litres tap water. Should guarantee wort temp was rapidly below 79c though.
Whirlpool hop additions added to fermentor. At first boiling temps then after cold water added probably below 79c so more of an Aroma Steep than a whirlpool.
OG 1.037 almost bang on target.
Took 36 hours for temp to drop to 19c. Pitched rehydrayed yeast.
Wait for Primary Fermentation to die down and take out Citra whirlpool/aroma steep hops.
Day7 took hops out. Gravity reading 1.008 so not far off target. 1 more week should get it there.
Very warm days...fermentor was reading 21c...
Day 10 Gravity 1.005. Added dry hops, plus about 10 grams of new hop Endeavor. Sourced in the UK. Whole leaf. We shall see....
Day 13 1.005. No movement. Will bottle tomorrow. Colour is lovely.
Endeavour hop aroma is very strong blackcurrant/berries. Can't wait to try this.
41 bottles. Now conditioning at 18c-22c
Slightly concerned that it won't have enough bite. Will have to see.
Sample tasted good. Decent bite. Not massive, but I didn't want massive bite. Opening the fermentor the berries aroma from the Endeavour hop was huge. But from the sample, not much really. Will have to see if there is more from the bottles in two weeks.
Had a cheeky sample of this om day 6 after bottling. Carbonated already (decent head and lacing) and no off flavours at all. Tastes a bit more Hobgoblin Dry Neck. It's a much lighter beer with not much malt complexity. But, it hasn't yet had proper time to condition so maybe this will improve a little. As it is, it is a good thirst quencher/ session ale. |

Notes: Early yeast hydration and proving. Wort from the mashout boiled while sparging to prove the yeast.
No squeezing of the bag, letting it rest in the collinder. Then to the sparge water for 10 minutes and let it drip again. Not too long, but the extra dripping liquid added later in the boil.
Mash with 15l, sparge with 15l
Gravity after mash was 1.056. 65 - 70% efficiency.
Added 5 liters of water to the boiling water in the beginning.
Stand hop start at 175 F, and let it rest for 30 minutes.

Notes: - Mill grain twice. Use fine-mesh grain bag to minimize pumpkin getting into the wort.
- Use pie pumpkin and/or butternut squash (if brown ale) about 10 pounds in total weight (to yield 3-5 lb net per 5-gallon batch). Halve the pumpkin, remove pulp and seeds, and place face down on foil lined pan w/2 Tbsp H2O. Bake at 350°F for 90 minutes, then mash into a pulp.
- Take about 1/2 gallon of the hot mash water before adding grain, add it to the pumpkin and stir to break up big clumps, yielding a slurry.
- Add all grains and stir, then add warm pumpkin slurry to the mash.
- After sparging and while boil kettle heats up, move mash bag to over spare kettle, squeezing & letting drain. Add additional wort to boil kettle. |
