Notes: 1st attempt at a brown ale using harvested chestnuts - make sure it's the spiky ones! Horse chestnuts aren't meant to be eaten
Gonna cut an X on the chestnuts and then roast on some BBQ coals. Crush and separate into shells and inner nut . Put the flesh into a processor and blitz
Add the nut shell in a hop bag during mash and add the blitzed flesh along with the malts
This is an experiment I don't know how much. if any fermentable sugar will be released by the chestnuts - My SG should show that
From reading it's worth adding the shells to get some more smokey notes
Also adding in some roasted Cacao nibs 1/2 lightly roasted, 1/2 darker roasted - should help balance the sweet chestnut
125g - 20 mins at 127 C
125g - 20 mins at 157 C
The malt extract is just to bump up the abv a little as it's going to be a Christmas beer. Northdown hops for the dry hop stage came from helping with our local breweries harvest, adding in just because! |

8.5 gallons Strike Temp = 157 degrees F
Mash Temp = 152 degrees F for 60 minutes
Both Pilsner and Minute Rice were milled before mash.
SG = Brix = 9.3 = 1.037 g/L
OG = Brix = 11.9 = 1.048 g/L
hydrometer = 1.049 g/L after correction
Temp = 88 degrees F. Put in fridge and cooled down to 65 before pitching yeast (S-23). Fermented at 54 degrees F.
On day 9 (Aug 9), both refractometer and hydrometer read 1.013 g/L. I kept it fermenting at 60-62 degrees F.
On day 14, gravity was still 1.013 g/L so I kegged it on 8/14/21. Very weird why the yeast did not attenuate more especially since mash temp was 152 F. Might try 148 F next time.
3 gallons were kegged with ~0.5 tsp gelatin. 2 gallons were bottled with 1.7 ounces of corn sugar (dextrose). |

"...IBUs dropped from a pre-Prohibition level of 30–40 to 25–30 after Prohibition." - BJCP So, if you prefer to have a more authentic version of the pre-prohibition lager, then up the cluster hops to 46 grams for 30 minutes of the boil.
Carapils did not exist prior to U.S. prohibition laws, so it is not an authentic addition. It is included to increase head retention. For a more authentic pre-prohibition style, remove the Carapils malt from the recipe and brew with the same amounts of all other ingredients. This will adjust the alcohol content and IBU, but only a small amount.
Whirlfloc tablets did not exist prior to U.S. prohibition laws, so they are not an authentic addition. They are added to clarify the beer. The method to clear the beer of the high residual proteins from the 6-row malt that is used in this recipe would have been to include a protein rest.
