Notes: 3 Liter starter 3 days before and decant before pitching.
Ferment starting at 50 degrees F and increase 1 degree every day until 62 degree. Hold at 62 for 5 days. If no SG change, cold crash for 5 more days with Gelatin.
Then rack over to secondary and lager in Secondary for 1 month.
Bottle at 2.5 Vol Co2.
Bottle and leave at room temp for 3 weeks to reach proper carbonation. Refrigerate in bottles for 1 week prior to tasting. |

14.5 gals of filtered water + 1tsp gypsum heated to 160F.
Grains stirred in slowly into large grain bag. Temp hit 152F.
Allow to mash for 1 hour and check starch conversion by iodine.
Starch conversion appears complete at 30 minutes.
Mash out at 170F after 1 hour mash.
Collected 13.5 gal at 13 Brix (1.052 SG)
Already at target OG. Will only boil 30 minutes.
15 Brix after boil: OG = 1.061

Notes: -15 min boil to sanitize, no hops
-chilled to 110
-siphon to 5 gallon fermenter, leave enough room for lacto inoculate, but looking for smallest amount of headspace
-set ferm chamber/wrap to 100
-pitch lacto (1x carton of goodbelly)
-check pH after 24 hrs
-transfer to boil kettle and top off with RO water. For my system I add 2 gallons for a 90 min boil (vigorous) and an additional 2.5 gallons to dilute. Aiming for 8 gallons of wort at 1.039
-boil for 90, hop accordingly (remember bitter+sour can be gross)
-chill to pitching temp, kolsch yeast will give a clean profile, but it's up to the brewer |
