moved off yeast into secondary left at room temperature (65F)
added hungarian oak cubes that were boiled in water and then dried. left for 30 days
on day 30, added vanilla beans, giaradelli 70% cocoa and 2 3" long mexican cinnamon sticks that had been sous vide at 148F for 1 hour. left for 14 days
on day 44, racked to new vessel and added vanilla beans back into beer. left for 14 more days.
on day 58, added toasted coconut to vessel. left for 14 days
racked to keg and carbonated at 10psi at 40F. |

Strike water = 7 gallons at 160 degrees F in kettle (BIAB)
Mash temp = 155 degrees F initially. Final mash temp = 148 degrees F Next time, do 152 degrees F
Mash time = 60 minutes.
SG = 10.8 Brix = 1.043 g/L
Total points = 37 * 10 = 370
Extraction points = 43 * 6.75 gallons = 290 points
% extraction = (290/370) * 100 = 78%
OG = 12.4 brix = 1.050 g/L of 5.5 gallons. Pitched Lallemand Voss Kviek dry yeast and left in garage.
Fermentation was extremely vigorous and fast. 2 days later (8/02/2020) fermentation (bubbling) had ceased and the yeast had settled.
Kegged 8/4/2020. Did not use gelatin.

Notes: gA huge yeast starter to make this Saison Dupont culture smash the attenuation and not stall out.
I will also be using my Inkbird controlled fermentation fridge / heater to maintain a hot fermentation.
first two days of fermentation 24C, 30C thereafter until completely attenuated. If yeast stalls I will add dry champagne yeast for a dry finish.
I fermented for around 10 days at 30C
