| Notes: Used 2nd generation WL840 from previous batch of American Lager. Excellent beer, reminisient of a German Pils with a lot more more body, or maybe an over-bitter Dortmunder. Hops aromatics/bitterness spot on for the style. In a judging scenario, it would probably score better as a Pre-Pro if the carafoam was increased and temp rests evened out between 148* and 160* to increase body. Maybe 45 mins each. |

Omitted the black malt/roasted barley, increased pale and crystal malts.
Using Harrow water.
Using false bottom and hop basket.
Whirlpool hops dropped in without basked.
EDIT we have now changed the hops to what we have in the freezer, and added lots more grain to increase the strength.
First choice for yeast was White Labs Burton. Decided on Mangrove Jack M15 over M41.
M41 would have more spice and less body, and higher strength |

Ingredients:
2.5 gal Tap Water
4 Gallons Bottled Water – Note: even though this is a 5 gallon recipe, you will need extra because of the fluid loss during the boil process
1lb Caramel 20
6lbs Liquid Gold Malt Extract
1lb Amber DME
2.5oz Cascade Hops
1oz Chinook Hops
1oz Northern Brewer Hops
1 Safale US-05 Dry Ale Yeast
Procedure:
Start with 2.5 gal tap water, add grain to cold water and heat water to 165 degrees, and steep grain for 30 minutes
Remove grain and bring wort to boil
Remove pot from heat, add 6lbs Liquid Gold Malt Extract and 1lb Amber DME and return wort to boil
Add 1oz Chinook hops and boil for 60 minutes
Add 1oz Northern Brewer hops hops and boil for 20 minutes
Add 2.5oz Cascade hops and boil for 1 minutes
Cool wort to 70 degrees
Add enough bottled water to bring the specific gravity to 1.055
Add Safale US-05 Dry Ale Yeast
Fermentation:
Primary – 2 weeks at 62-70 degrees
Secondary – 4 weeks at 62-70 degrees
Bottling:
6 weeks after brew date
Use .25oz of corn sugar per gallon of beer
Condition beer for 4 weeks at 62-70 degrees
