| Notes: The first two weeks of bottle conditioning has a really tropical fruit taste, after the third weeks, it become more floral with a note of tropical fruit. Really great IBU of 60 is not that perceptible. Will rebrew this recipe for sure. Primed at 2.4 CO2 per volume. After 2.5 weeks of warm conditioning all bottles were moved into the refrigerator for cold conditioning. |

This is the award winning recipe by Hermann Holtrop from a Rochefort 8 clone comp that was held in the Netherlands. I think it's very close to the original Rochefort 8. A little darker then the original, but just as tasty... enjoy! If you can't find Carafa Special, Carafa l (337.0 SRM) will work well but will be a bit darker so scale back a bit.

Notes: This beer is based on clone of Carton Regular coffee I brewed, adding the maple syrup in place of the cocoa.
Use 2 packs of US-05 fermented at 65deg. Add 8.9oz (1 small bottle) Maple syrup when initial fermentation has calmed but not stopped. Soak Vanilla Beans in grain alcohol for the length of primary fermentation and add the liquid, bacon juice and Coffee Beans to secondary for 7 days. Add another 8.9oz bottle of maple syrup to the keg, chill and carb. |

Notes: This is my first attempt with a harvested liquid yeast. I've always used Nottingham dry yeast in the past and decided to go with this WLP051 which I purchased for my last batch of an American IPA that I just brewed.
Brown sugar syrup will be added on day three of primary fermentation. I will bottle about one gallon of this after a two week primary fermentation. I will then rack to secondary for another two weeks and then cold crash in fridge for 4 days. I will add gelatin and chill for another 4-5 days and then rack to a keg. |
