Notes: MO (Maris otter) base to start off with some more complex gram cracker flavors, 13% wheat for extra body/head retention, and bready flavor. 13% Rye for the 'Rye spice'. 3% honey and Crystal 40 for sweet caramel/toffee flavors. 1lb sugar for extra ABV, and for a slightly dryer finish.
BOIL: 1oz of Apollo 18AA for bittering at the start of the boil for 50 IBU's. 1/2 oz of Columbus, and Centennial in the boil for some hot side American hop flavor. 1oz of Crystal to round out and pump up the hot side hop flavor. 70 IBU's in total
WHIRLPOOL: 1oz of Cen + Columbus, and .5 Idaho 7 to be added during cool down once it hits 180F or another boost in hop flavor, and no bitterness.
DRYHOP: 6oz total for dryhop 1.5oz Idaho 7 for the resin/pine, 2oz Columbus for the dank/woody, 2oz Topaz to round out the American hops with some fruitiness.
Keg Hop: .5oz of Simcoe Cryo in the keg because it's dank and fruity, and tastes good AF in the keg. (might also snag some topaz for the keg depending on how good it smells)
Using Voss Kveik as the basement is a bit hot, and it can go up to 100F without issue. Should ferment quite low for a crisp finish with a hint of citrusy esters. I will be adding 10g Yeast nutrients at the end of the boil to ensure no off flavors from the quick ferment. Planning on fermenting around 75-85F raising the temp at the end to ensure good attenuation.
Water profile is 3.5:1 SO4:CL for emphasis on the crisp finish and bitter/hoppy flavors. The MO, Rye, and crystal malts will ensure there's enough complex malt flavors to still shine through the 12oz of hops, and 70 IBU's. |

Notes: Used an online recipe and substituted for available malts, changed the 10min Amarillo to magnum hops and subbed citra for an amarillo/cascade combo at 0min. The malts and hops fit the target flavour and aroma profile and it hits for all the vitals in theory. Also a newer style of beer so I wasn't trying to find all American malt or anything fancy like that.
Too much grain on the bill to fit into the Grainfather. We needed to remove/not use roughly 1kg of grain but no way to tel what mix the unused grain was. The gravity was also low because of the efficiency of a large mash. To get the gravity up we had to add 1kg dextrose before the yeast went in to ferment. |

Notes: Taipari Brew 10. Lockdown Day 2.
Start mash at 1045 with 4kg Gladfield Ale Malt, 1kg Weyermann Pilsner and 250gms Gladfield Dark crystal at 67C for 120mins.
Start Sparge at 1345 collect
Fire up gas with 25L at 1310 add another 5L. Boiling at 1345. Add 20gms Pacific Gem in Spider. Add cooling coil 1445.
Add 10gms Zythos and 10gms Mandarina Bavaria at 1505 for last 10 minutes of boil. Flame out at 1515.
Start cooling with coils and 2 fans at 1515.
Add 10gms Zythos, 10gms Mandarina, 20gms Mosaic and 20gms Citra into spider at 1520.
Wort in HLT temp 40C at 1545, 30-35C at 1600.
Start runoff to SS Fermenter at 1625 at 25-30C - collect 22L.
OG 1050 at 30C = 1052 = 70% efficiency.
Saturated yeast ( 1 sachet US05 ) pitched and aerated at 1840 at 22-24C.
Go well Brew31.
Saturday 28/3 Bubbling away nicely.
Sunday 29/3 Bubbling every 1-2 secs. Nice yeasty smell.
Tues 31/3 Bubbling every 3-4 secs. Tasting good still a little sweet with rounded bitterness - hoping those hop flavours come through.
Wed 1/4 bubbling slowed to 4-6secs. Lift temp to 22C for D Rest.
Sat 4/4 drop temp to 5C to chill pre bottling.
Monday 6/4 Gravity 1012. 1052-1012 = 5.25%
Tuesday 7th Bottle - 24x750ml and 6x500ml = 21Litres. Bit cloudy but exceptionally tasty with big hop flavours not at all overly bitter - look forward to some bottle conditioning.
Salvage yeast in 1st take into plastic, 2nd take ( most ) glass jar.
