Transfer to another vessel and store at 70 degrees for another week.
Cold crash for 1 days at 40 degrees.
Keg at 20 psi for one week.

Notes: - Protein rest 135F for 30 min ( pH 5.5-5.3)
- Mash at 155F for 45 min, mash out 170 for 5 min
- Chill to 95-100F (35-38C). Measure pH. Add Lactic Acid (88%) to wort until pH reaches ~4.5, add Probiotic Juice Drink into kettle, cover wort with film wrap to prevent O2, Hold temperature at 95-100F for 24-72 hours. pH should be between 3.2-3.6
- Boil 30 min and Hop Addition as per hop bill.
- Chill and rack to carboy. Pitch M12 Kveik Yeast and ferment as per instruction.

Substitutes: - All Gladfield malts, (x2, dry pitched) M44 US West Coast yeast in for Nottingham.
- Mash down to 31.5 L from 32 L, boil time cut to 45 min from 60 min.
OG: 1071 (Refract.) 1070 (Tilt)
3/8/20 - SG: 1018, dry hopped 50 g Simcoe instead of 30 g (had it left) and 20 g of Columbus CRYO. Went a little harder on the dry hop just because.
5/8/20 - FG: 1017, cold crashed.
Batch #1 - 23/02/20 (Eff.: 56%, Att.: 74%, ABV: 6.6%)
- Mash vol.: 32 L, Pre-boil vol.: 28 L, Batch vol.: 23.5 L
Substitutes: - All Gladfield malts
OG: 1069 (hyd.) 1066 (Tilt)
- Simcoe hops in for Nugget pellets so weights were halved, old bag of Magnum that was left over.
- Nottingham yeast used (x2), re-hydrated but not aerated as per instructions.
- Brewtan B not added at start, forgot.
26/2/20 - SG: 1020
1/3/20 - SG: 1018
3/3/20 - SG: 1017 (Tilt), dry hopped Simcoe Cryo 20g, 30g Columbus
12/3/20 - Kegged and carbed at 30psi for 2:50 min.
25/3/20 - Tastes hoppy with a bitter pine finish, hint of toffee and biscuit on the front, easy drinker worth trying again. 4 out of 5 I reckon.
Durty Vital Stats: 8.4% ABV, 97 IBU (from brewers website)

The brainchild of our small batch brewer, George Woods. A dangerously drinkable milk sugar- infused Scotch Ale. Lots of malt in this one. Mash-in in stages, and spread the pale ale malt throughout the mash to provide stability. If the mash starts to sink, stop, wait a few minutes while mixing, then start again.

Jack Hammer has been single handedly ripping it up for quite some time. Now, the definitive bitter and twisted IPA, has spawned four Hammer Head off-springs. Black Hammer is the second of our hyped up hybrid IPAs. A black hearted beast, that takes no prisoners. American hops and dark malt combine to make mischief. Grapefruit and coffee collide in sensory overload – a wake-up call for other IPA’s. Molten waves of pithy grapefruit build and finally ebb to the roasty bitter onslaught. Stand firm and wield the Black Hammer with care. Stare into the black abyss and succumb to the dark-side. You may have to leave this beer on dry hops for slightly longer than usual to let the flavours balance.

Notes: I have been gradually raising the mash temp starting at around 120 F up to the final mash temp of 152 F over about an hours time. Mash is held at 152 F for another 30 minutes, Then, I mash out for at 170 F for 10 minutes followed by a fly sparge with 170 F water.
