Original recipe uses Crystal 120L and Crystal 40L and dark munich. However, UK chocolate is apparently a lot darker so this is coming out the same colour.
Original recipe suggest 10ml per 473ml of beer and 2 vanilla pods for 7-14 days
If bottling 21L that is 444ml bourbon.
I think it might be a good idea chop and scrape the vanilla pods and soak in some of the bourbon (for sanitisation). Then add the whole lot to the primary. This is going to extract some flavour, so should probably be counted in the steeping time.
So: 2 vanilla pods scraped in 200ml bourbon for 2 days. Chuck the lot into primary for 12 days, then bottle with another 244ml bourbon and priming sugar.

Notes: Ferment at 10C till about 1.022, around 12 days.
Raise to 14-15C for diacetyl rest
Lager at 4C for 3 weeks
Then lager at -2C for 2 weeks
So total ferment and lagering process takes around 6 weeks
After 90 minute boil, flame out, whirlpool and the turn off and allow everything to settle before adding the whirlpool hops.
Temp should be around 90C by then.
Yeast should be a low sulphur yeast and need 8 to 10 packs of dry yeast to aim for 2 million cells per mL
Target Gravity 1.047
Final Gravity 1.009 - 11
PH should be around 5.2
Use lactic acid to lower if needed |

Notes: Mash at 155 degrees for 60 minutes.
At the beginning of boil add a 60 minute bittering addition using .25 oz of El Dorado hops.
Once the boil was complete, chill the wort down to 180 degrees and completed a hopstand using 2 ounces of Mosaic and 2 ounces of El Dorado hops.
Chill the wort to 70 degrees and added White Labs WLP013 London Ale Yeast.
Wait two days add 2 ounces of El Dorado hops. |
