Notes: Brewed 4/5/14. First time attempting something like this. Decided to batch sparge to try to save on time. Strike was about 173F and we hit about 149 in one mash tun and 151 in the other. I accidentally over estimated the sparge water since I just doubled the amount for 5 gal so we ended up having enough for the second beer also (meaning I estimated about 8gal over on the necessary sparge water). Didn't run into too many issues just a bit of a stuck original runoff but I sort of expected that. In kettle efficiency was very low at 59%. Brew house efficiency was way lower than expected. Not sure why. Possibly from using a lot of sparge water. Used some slurry and had to top off with some water to hit 5gal in each carboy. |

Notes: Heat 8 gallons of water to 160F. Add BIAB bag to keggle and clip it to edges.
Add total grains and stir to eliminate any dough balls.
Check temp, its should be around 154F, a little lower is better than too high (160F is max) if temp is too high drain some of the liquid off and add back to the grains and stir, keep stirring until you reach mash temp (154F).
Cover the keggle with a lid and let it sit for 60 minutes.
Raise temperature to 170 and let sit for 10 minutes (Mash Out).
Remove grain bag and squeeze the bag to extract more liquid. No need to squeeze all liquid out, just give it a few good squeezes.
Bring the liquid (wort) to a boil and add hops per the recipe. This is a 60 minute boil. |

Notes: Gallon Jugs of store bought Wasatch Mountain Spring Water.
Add 2.5 gallons in steel pot and seep Flaked Corn in mesh bag for 30 minutes at 150 degrees.
Remove the Flaked Corn from Wort, and remove pot from heat, and add all the dry malt. Stir and move pot back on burner and bring to a boil. add all the peppers and all the hops to wort.
Boil for 60 minutes. Remove peppers and cool wort, pitch yeast. |

Notes: Sorghum has a sour/metallic after taste. For my first GF beer, I decided to brew something that would play along with that aftertaste, rather than have it be out of place in a traditional beer style.
Grapefruit and Lactobacillus each have a tinny, sour flavor note. Brett is the main fermentation strain because of it's well-known prickly pineapple profile (also metallic and tinny).
The goal here was to use sorghum's well-known flaws to accentuate the character of the beer, rather than fight to mask them. |
