Notes: I have NOT brewed this one, I'm entering it to use as my base for my Mexican lager.

boil water to 150 degrees
Take off heat and add grains in bag and steep for 30 minutes.
Remove grains
Back to boil for 60 minutes
Add 1st hops
Cool to about 60 degrees.
Strain if needed when pouring to fermenter.
Add yeast.
Ferment about 58-65 degrees in dark area.
*Yeast claims to not ferment well in low temperatures even though its a lager yeast. Keep under 65 degrees to get lager results though. |

Notes: Pouring a pint of this anything-but-sheepish ale will overcome your senses with intense hop character. Dominant notes of citrus, stone fruits, and floral character relentlessly invade your nostrils while the woolly soft malt backbone and slight honey flavor mingle in the background and round out the palate. Hops Lamb’s deep golden hue produces a firm, billowy, off-white foam head which serves as the vehicle for releasing the uncanny aroma produced by a colossal dry-hop addition. Notes: Ferment at 58° for 12-15 days then raise to 68° to finish. Drop to 40° for lager. Rack to keg or bottle.
Depending on taste at final gravity, may dry hop. Fast ferment taste was pretty hoppy, moderate bitter. 1.030 at 11 days.
Best beer I've made. Back off bittering hops a touch. Maybe add a bit of citra, columbus, cascade, or amarillo for depth at 0min. |

Notes: After mashing out, lauter into sterilised demi johns 9/10 full. Add bagged uncrushed base malt to some wort at 49C for 30 mins, top off demi johns right to the top with inoculated wort, and then blast some CO2. keep the wort warm, (30-40) for 36 hrs. take pH readings reguarly, close to 3.5 is the goal.
Slightly off cream corn smell should be expected, if there are vomit garbage shit smells then probably aerobacter infection.
towards 25-30 for clean lacto, toward 50 for citric funk. too high kills lacto.
15 min Boil and chill, ferment with clean ale yeast.

With Amylase Enzyme should bring your FG down to 1.007 or lower to make it extra crisp. |

8.0 lbs pale malt
2.0 lbs Golden Naked Oats
1.0 lbs flaked oats
1.0 lbs white wheat malt
Mash
Single infusion mash at 150°F
Hops
1.0 oz Columbus for 60 minutes
1.5 oz Mosaic whirlpool at 180°F for 20 minutes
1.5 oz Mosaic whirlpool at 180°F for 20 minutes
3.0 oz of Mosaic at dry-hop (10 days after fermentation start, or when kegged)

1.5 lbs lactose (added 2 days after fermentation start)
6.0 lbs strawberry puree (added 2 days after fermentation start) [For the puree, took 6lbs of frozen strawberries, added 1.5lb of lactose on stove with ~12oz of fermenting ‘wort’ and heated gently to around 180F for ~15 minutes, to ensure no contamination of wild yeast)
Note: You can also add some pectinase at this time, which might help breakdown the strawberries a little more and enhance flavor extraction. |
