| Notes: Mix grain with strike water and mash the appropriate time suggested in the mash schedule above and then mash out. Fly sparge with 0.34 gal water at 168 F. Boil 6.22 gal for 60 minutes adding the bittering hops at times suggested in the ingredient list. Add the whirlfloc tablet when 15 minutes remain in the boil. After the boil is complete, chill the wort rapidly to 64.0 F and transfer to a sanitized fermentation vessel. Ferment at 64 F for 7 days. Transfer to secondary and add your chiles. Once the desired level of heat has been added, crash the beer for 3 days at 39 F and then bottle or keg with priming sugar (skip the sugar addition if force carbonating in your keg). |

Notes: Mash at 149°F (63°C) for 90 minutes, drain, and sparge to yield 5.5 gallons (18.9 l). Allow the wort to cool to 110–120°F (43–49°C), and pitch your Lacto culture. Kettle sour to the desired perceivable acidity level (should be sharply sour). See “The Art of Tart” for more information.
Boil for 15 minutes, adding hops at the start of the boil.
Chill, pitch the Wyeast 1007, and ferment at 65°F (18°C). After completing fermentation, package to 3.5 volumes of CO2.
add pomegranate juice after high Krausen. Add 8 points to Gravity making it 1.045 when it’s all said and done. |

Notes: Brewed during the COVID-19 Virus Pandemic of 2020.
Yeast Starter: (1-2 days ahead)
Break the yeast packet.
When the packet has expanded, mix 1/2 cup of malt extract into 2 cups of water (or double this in a gallon jug).
Bring to boil - simmer for 10 mins. Add ¼ teaspoon of yeast nutrient.
Cool to 80 F - pour into sterile 2 qt. jar. Add yeast and cover with aluminum foil.
Shake as often as possible (seriously, multiple times a day!)
Wort:
Bring 2 gallons of water 160F. Add grains and steep for 25 mins.
Turn off heat. Add all sugars. Add water or extract to reach target gravity. Check gravity with a refractometer.
Bring to boil and add bittering hops.
Boil for 45 mins. and then add the aroma hops, 1 tsp. of Irish Moss and ½ tsp. yeast nutrient. At this time place the wort chiller in the brew pot to sterilize.
After 60 mins., remove from heat.
Begin to force cool.
Cool to 80F, and add to cool water in fermenter. Take readings.
Aerate well and pitch yeast.
Ferment for 1 week between 64-72F.
Sanitize can of cherry puree. Pour cherry puree into secondary bucket and transfer beer. Stir occasionally with a sterilized spoon.
Leave in secondary for 2 weeks. Take readings.
Bottle with priming sugar. Drink in 2-4 weeks.

23°C into fermenter, chilled to 21°C added yeast and chilled to 20°C
Fermentation temp started at 18/19°C and raised to 22°C over 5 days.
1.020 after 4days. Tasting good. Very roasty and lingering bitterness.
FG1.016 at 6 days. As above. Great roasted toasty aroma. Moderate to strong complex roast flavour. Clean fermentation with low to moderate esters.
4.6% Abv
140g Dextrose for priming at 2.1 volumes
Bottled 14-4-18 tasting great
Drinking great 25-4-18. Plenty of medium roast character but in balance.

My tweaks will be to replace the White Labs WLP028 with Imperial Yeast A31Tartan, adjusted the grain bill to use grains I have on hand (subbed GP for MO.) | Notes: Brewed 9/14/2013 Hit 150 for the mash temp. Strike water was 174 and it hit 156. Had to recirculate and add about 3 cups of cold water to get it down to 150. I was trying to over shoot the temps so I could account for temp loss on the re-circulation but I guess I did too much. pH was 5.3. Boil gravity was 1.048. Hit 5.75 almost perfectly again. Chilled down to 73F and pitched the yeast. Got a slower start from this brew because chilled it down more than usualy with the pre-chiller. Day 1 and 2 of primary fermentation temps were between 66 and 68F. Day three is crept up to 70F and I cooled it down to 69F. By day 4 it had climbed up to 70F again and I decided to stop temp control. By evening of day 4 it had crept up to about 73. Day 5 it was up to 75F. I cooled it in the evening down to 73. Day 6 it was still at 73. Took a gravity reading on 9/27 and it finished out at 1.012 so same as last time. 9/29/13 used 1/2 Tbsp of biofine for clarifier. 9/30 did another 1/2 Tbsp of biofine. Seemes to be clearer on 10/1 when I started the cold crash. Kegged 10/3, seemed to be clearier than last time. |
