Notes: Mash crushed grains in about 6 gallons of clean, chlorine-free water at 150˚F for 60 minutes. Sparge to collect about 7 gallons of wort in the kettle, then bring wort to a boil. Add hops according to schedule above. For the 0 minute additions, add the hops gradually after cutting off the heat, allowing the hops to steep in the wort as you chill it down, at least 30 minutes, or for as long as an hour. When the wort temperature reaches 68˚F, transfer to a fermenter and pitch the yeast starter. Ferment for 7 days at 68˚F, then pitch first round of dry hops. After 4 days, transfer to secondary fermenter and pitch second round of dry hops. After four days, bottle or keg. Beer will be ready to drink in 1-2 weeks.

Notes: My homebrew shop was out of the regular American Ale so I used American Ale II and I was happy with the results.
For the orange I just sanitized the orange, took the skin off to get me 1 oz and threw it in with my Irish Moss.
It sat in my primary then I siphoned to condition for three weeks.
Kegged it at 8.2 and after 5 days it tastes great! It's a little more pale than a typical American IPA, but it's very drinkable--which is what I was going for. |

Brewing in Anvil 5.5 gal kettle.
Have to use a little less water for the BIAB mash (4 gallons) and then sparge with the remaining .94 gallons (120.32 oz)
-Hops & spices added to a hops bag to lessen the trub.
-Add 4 oz maltodextrin during last 10 minutes of boil with remaining hops & spices.
-Primary fermentation in the kettle for 14 days.
Optional: Rack to secondary fermenter for 14 days to add spices and to clear a bit. Racking should stir up those lazy yeasties.
For the first batch I will use Mangrove Jack's Belgian Ale Yeast M41 (Spicy and phenolic, this yeast emulates the intensity and complexity of some of the best monastic breweries in Belgium. High attenuation and alcohol tolerance.)
For the second batch I will use Mangrove Jack's Belgian Tripel Yeast M31 (Provides a fantastic complex marriage of spice, fruity esters, phenolics and alcohol. It is also very attenuative with a high alcohol tolerance.)

| Notes: Brewed 9/14/2013 Hit 150 for the mash temp. Strike water was 174 and it hit 156. Had to recirculate and add about 3 cups of cold water to get it down to 150. I was trying to over shoot the temps so I could account for temp loss on the re-circulation but I guess I did too much. pH was 5.3. Boil gravity was 1.048. Hit 5.75 almost perfectly again. Chilled down to 73F and pitched the yeast. Got a slower start from this brew because chilled it down more than usualy with the pre-chiller. Day 1 and 2 of primary fermentation temps were between 66 and 68F. Day three is crept up to 70F and I cooled it down to 69F. By day 4 it had climbed up to 70F again and I decided to stop temp control. By evening of day 4 it had crept up to about 73. Day 5 it was up to 75F. I cooled it in the evening down to 73. Day 6 it was still at 73. Took a gravity reading on 9/27 and it finished out at 1.012 so same as last time. 9/29/13 used 1/2 Tbsp of biofine for clarifier. 9/30 did another 1/2 Tbsp of biofine. Seemes to be clearer on 10/1 when I started the cold crash. Kegged 10/3, seemed to be clearier than last time. |

Start mash with 8 gallons water
With 10.05 pounds of grain, absorbing 0.125 gallons per pound, there should be 6.75 gallons of wort after mash. Boiling off 0.3 gallons per hour for 2:15, there should be 6.1 gallons after boil. Then turn off heat, stir for 10 minutes and into the container it goes.
Try setting induction burned to 155, stirring every 10 minutes to hold at 157.

Start mash with 7.3 gallons water
With 10.05 pounds of grain, absorbing 0.125 gallons per pound, there should be 6.05 gallons of wort after mash. Boiling off 0.3 gallons per hour for 2:15, there should be 5.35 gallons after boil.
