I messed up this beer from start to finish, but it still came out ok, sending to comp
on brew day i when sparging i accidentally sent a gallon or two of wort into the floor
during fermentation i forgot to turn on the chiller. this lager fermented above 80 degrees for over a week while we were out of town
on packaging, i couldnt seem to get the beer transferred. i got a gallon or two out of the keg but ran out of gas. went to get gas the next day and continued a day later, still couldnt get it to transfer closed. had to do an open transfer and still somehow couldnt get it all out of there. the dry hops did not drop for some reason.
all in all, i think its not as amazing as it normally is but i cant really tell any flaws by taste. they could come out as it warms though especially after packaging and transport.

rebrewing for 2nd time this year to send to dominion cup. will use store bought flaked rice this time for simplicity. reducing pils and rice both by a half pound. removing the wet hops.

just brewed this, made the 3.5 lb rice on the stove, went in fridge until later. idk i dont seem to get good efficiency out of using that, maybe go back to corn or try flaked rice from the homebrew shop.
efficiency was bad, added a lb of sugar in the end, i was just trying to hit the 1075 but probably didnt need that much since its look like like abv maybe in the high 7s.
used one pack 3470 on yeast starter overnight. pulled wort from the brew after it had boiled and added ice cubes to instantly cool then went on the stir plate. had problems with the glycol chiller so the wort wasnt down to temp til the morning.

this was the harvest ipa but i think has the best base recipe. instant pot rice and pilsner malt + 3470. need to figure out hops. i think centennial and mosaic was my best combination so just need to adjust those here. maybe dry hop with some whole hops to replicate the harvest experience? plus cryo?

This might be the best IPA Ive ever brewed. I did all of the hops in a bag in dry hop stage. Cold IPA is the perfect style for this, it being such a blank slate. Since I only had about 4 oz wet hops I did the mosaic in dry hop as well. It didnt just taste like mosaic though, it had a really delicious unique hop flavor Ive never experienced - tasted like watermelon to me. Not fresh watermelon but like watermelon jolly rancher.

several variants but came back to the original recipe to build this one.
adjusting here based on brew day notes mainly on volume and efficiency.
also added 9oz fresh picked home grown hops into dry hop. not sure the varieties, i believe cascade and centennial at least, maybe other stuff.

note there are various other versions of this but the original was the best so i am creating this copy from that.
except this time I am going to use rice.
i did end up with 3.5 lb rice which i suppose is ok, ive used up to 4 lbs for a 5 gallon batch in the past mostly for lagers. hopefully it doesnt thin out body too much. its still 13.5 lb pilsner malt so proportionately it should be ok.
I forgot until brew day that using instant rice is a dumb idea because those boxes are like 2.75/lb. and i didnt buy any. I mixed white instant rice, brown instant rice, regular brown rice and a little regular white rice to get up to 3.5 lb. Put it all in a pot with about half the rice volume's worth of water and heated to boil, then lowered to simmer covered for about an hour in our big pot in the kitchen. honestly the rice turned out pretty nice, it was fluffy and wasnt scorched or undercooked. i didnt taste any though. it was a lot volume wise.

this brew came out fantastic! couple execution items to clean up - didnt seem to clear out fully, and 2nd half of the keg had faint oxidation.
the hop combo was really nice, mosaic dominated and there was no bittering. next time consider going 2/3 centennial 1/3 mosaic

decided to go with corn instead of rice. adjusted the water profile. its a little high on calcium but should be locked in to the 1:2 cl to so profile adjusted from tap water.
thinking about mash hopping?? maybe not for this since lager yeast

i think i have the malt bill down, 80-20 pils to rice. would like to understand the difference between using flaked rice vs minute rice (any flavor difference? any price difference?) and also between flaked rice and flaked corn (flavor difference?)
also need to figure out water, im guessing i can use my west coast ipa profile
also need a plan for hops. what bitterness we aiming for. going fruity/juicy? or classic american hops?
will go with 34/70 at 68 degrees
