Notes: A low ABV Saison/Farmhouse Ale. Looking for big yeast flavours balanced by large hop flavours but with a session level for drinking. The hops are out of style for a traditional Saison.
Use both WY3711 and Wyeast 3726 at the start.
Looking to reuse the yeast multiple times to attenuate well (French Saison) and to capture some of the diverse flavours from the other yeasts.
WLP565, WY3724, WY3711 & WY3726 are all interesting here. Blending yeast will leave some strains dominant but that is ok whatever takes off in our fermenter is what we are after.
Start fermentation at cooler then ramp the temperature up.
Start at around 18C. The amount of time spent at this temperature depends on how long the lag phase is and when the yeast starts developing.
26.5 is a good goal for main fermentation. Slowly raise to this by 3rd day.
High side is even up to 28C-35C! to stimulate ester development. Experimentation is needed to try different fermentation temperatures to balance.
Add dry hop additions after fermentation has finished. |

Notes: Idea of this beer: try out the flavour of Rakau hop from NZ for a experiment later on with additional 2 hop varities
Starter was done with 0.5 l of alc-free beer and 0.4 wort from a brewery. No SG or °C were measured. One day before brewing.
10% Spelt malt cause I bought too much and wanted to see what would happen.
Mash-in at 55°C to give it a short time to break down some of the proteins from the spelt malt and heat directly to 67°C and make a rest for 1h.
Add first dry hop at Kräusen or right after it starts to decrease.
Not sure about 2nd dry hop when kegging. Depends on taste after 1st dry hop.

ABV: 3.8% (possibly cocked up the OG though, this is definately stronger)
3 sliced bananas caramelised in soft brown sugar added to fermentor during primary.
Bottle date: 28/11/17
First taste was 2 weeks (exactly) after bottling. Still needs to carb up a bit but all together very nice beer. Sweet and has subtle banana flavours in there too. Vanilla and rum are fairly hard to pick out though. Tad too dark so ease up on the chocolate malt next time. Double the adjuncts.
