When the gravity has dropped to the 1.020–1.024 range, add first dry hops. After a few more days, when fermentation has stopped, add second dry hops (dumping the previous hop trub, if possible). After 3 more days, crash, package, and carbonate to about 2.5 volumes of CO2.

#9 Ebbegarden, Stordal
Smak: Rom-lignende, litt varme, medium mixed estere, rund. Kan gi kraftig tropisk fruktaroma, hvis den brukes riktig. Har en tendens til å lage kraftig bitterhet, så vær forsiktig med å ikke koke humlen, eller for å redusere IBU.
Kilde: Denne kveik kommer fra Jens Aage Øvrebust. Jens brygget opprinnelig rå øl, men begynte å koke vørteren fordi øla ble sur av og til. Jens foretrekker ikke å la gjæren gå over 30 grader. Vanligvis ferdig gjera på 4-6 dager. Jens går vanligvis ned til en SG på 1010, fordi han ikke vil at ølen er søt. Han sier at gjæra alltid har vært i dalen så langt han vet. Kveiken synes å ha et uvanlig forhold til humle, så pass på at denne gjæren kan fremheve bitterheta i ølet ditt. Jens sier at han bare tørrhumler.
