Notes: Shredded carrots were boiled for 10 minutes with 1 pound of 2 row to gelatinize starches prior to adding to mash.
Grated cinnamon, vanilla bean and nutmeg soaked in 6 oz. bourbon for two weeks.
Strain and add to taste at kegging. Candied ginger root added to boil with 15 minutes left. |

Notes: Let the fermentation start at 20C and allow to climb for 2 days. 1st dry hop added during active fermentation @ day 2 and cooling applied to bring the fermentation down to 18C. 2nd dry hop added when active fermentation has slowed and gravity reads 1.020.
Dry hops added in hop socks.
RIngwood Ale yeast stepped up in 3L water, 304g spray malt solution in a 5L demijohn to give about 500B cells. 100B cells saved, 400B pitched.

Notes: Fat Tire clone, American Amber Ale.
Grains at 155F for 20 minutes.
Strain through a BIAB bag, don't squeeze, let dip.
Boil & remove from heat. Add extract, stirring steadily.
Back to heat and slow boil, adding hops per schedule.
Strain back to the fermentor through the (cleaned) bag.
Splash the wort to help aerate it.
Add ice cold jug water to 5 gallons. (jug water is sterilized for shelf-life)
Ice Bath to 70f and sprinkle dry yeast on top.
1 week primary, rack to secondary for another week.
Bottle as thou wilt.
