Notes: Főzési lépések:
1. 0,9kg mézet elkeverni 0,9l vízzel. Kb. 30 min dekokció és karamellizálás, kevergetés mellett. Cél, hogy „bebarnuljon” a méz és kb. a felére redukálódjon vissza a teljes mennyiség. A karamellizáció által olyan cukrok kerülnek a sörbe, amit az élesztő nem tud bontani, ezáltal édes marad a sör.
2. 3l vizet felmelegíteni 67-70°C-ra, beletenni a malátákat, 30 min-ig hőntartani. Ha az idő lejárt, a malátát eltávolítani a vízből. A cél az, hogy a fehérjék és a maláta íze a sörbe kerüljön, nem a cukrok kioldása. A cukrok a mézből kerülnek a sörbe.
3. A malátás cefrébe beletenni a maradék 0,9kg mézet, felforralni kb 5 percre.
4. Visszahűteni a cefrét 80°C-ra, majd a komlót beletenni 15 min-ra. Az idő végeztével a komlót el kell távolítani a cefréből.
5. Hozzáönteni a maradék vizet úgy, hogy kb 10l legyen a végén a kihozatal.
6. Visszahűteni kb 20-25 °C-ra, az élesztőt egyenletesen a tetejére szórni, nem kell elkeverni.
Eresztési lépések:
1. Erjedés indítása: 18°C-on, 1 nap
2. Főerjedés: 16°C-on, 5-6 nap
3. Hidegerjedés: 4-5°C, 3-4 nap
4. Cold crush: 1-2°C, 2 nap
Palackozás:
A. Ha át lehet fejteni a sört egy másik edénybe:
a. 70g mézet 0,1 dl vízben felforralni, majd visszahűteni 20°C alá
b. Átfejtés után a víz-méz keveréket belekeverni a sörbe. Óvatosan keverni, hogy ne habozzon fel, illetve minél kevesebb O2 kerüljön a sörbe.
c. Palackozni 0,5l palackokba.
d. Palackerjedés: 7-10 nap
B. Ha a sört nem lehet átfejteni és egyből az üvegbe megy:
a. 60 g kristálycukrot kimérni.
b. 20 db sörösüvegbe adagolni 3g cukrot palaconként.
c. A sört átfejteni a palacokba.
d. Palackerjedés: 7-10 nap
