Notes: Pitch at 48, aerate with pure oxygen. Ferment at 50. Add dry hops after 4 days of fermentation. After 7 days total, slowly raise temp to 60 for a 3 day diacetyl rest. Slowly lower temp to 34. Once at terminal gravity (about 14 days total) keg beer. Lager at 34 for about one month before serving.

Notes: Prepared 2000 mL Yeast starter with 1500 mL of water and 1 cup of Pilsen DME 20 hours before pitching. Had to affix blowoff hose to starter as it started bubbling through airlock.
Steeped grains in 2 gallons of water 150-160 for 30 minutes. Sparged with 1 gallon of water 170.
OG was 1.1015 and FG 1.026.
Priming amount although adequate for style should be cut down. If poured in appropriate glass it is fine but when giving out to friends that may not have Belgian glasses it would appear over-carbonated. |

| Notes: Secondary was performed in the keg at ferm temps. Temp controller cycled heat and cool with a 3 deg delta from 68F thus max swing was theoretically 65-71F. Given this is January I believe it stayed mostly on the lower end (65-68F). Actual (1st brew) OG/FG was 1054 and 1011 respectively for 5.65% ABV. |

Notes: Brewed on May 20, 2017
-Added acidulated malt 60 minutes into mash. Added 1 quart of water at boiling to maintain temp around 149 F. Let it for 45 minutes.
-Recirculated and sparged with 16 quarts at 170 F.
OG = 1.042
-Believe OG is a little low because I didn't sparge well enough.
Racked beer to secondary fermentor on June 4, 2017. FG1 = 1.012
Bottled on Jun 18, 2017. 2.8 volumes (151 g of Table sugar); FG2 = 1.012

Notes: Steep grains in 2.5 gallons water at 155 deg F for 30 minutes.
Bring to Boil and add Maris Otter Malt Extract, Light Dry Malt Extract, and Invert Sugar, return to boil
Add 1 oz Northern Brewer hops at start of boil.
After 30 minutes, Add 2oz Willamette Hops
After 15 minutes (45 min into boil), add 2 oz Fuggle Hops and Irish Moss/Whirlfloc.
Boil remaining 15 minutes.
secondary for one month to settle sediment prior to aging in oak barrel
to be aged 2+ months in used bourbon barrel.
If not aging in barrel, soak 2oz of Oak Cubes in bourbon of choice, and add to secondary - age 2+ months (6 months recommended) |
