Notes: 1. In your kettle, heat 3 gallons of water
2. When warm, carefully add your Dry Malt Extract (DME), stirring to avoid clumps
3. Bring your wort (malt liquid) to a boil
4. When the wort is at full boil, start a 60 minute timer and add 1.5oz Perle hops to the boil
5After 45 minutes, with 15 minutes remaining, add 1 oz Hersbrucker and 1 tsp Irish Moss
6. After 15 more minutes, with 0 remaining on your timer, add 1 oz Hersbrucker and turn off heat and cool (in sink or otherwise)
7. Rack wort into your fermentation vessel, top up to 5 gallons with cold water and cool until about 70 F
8. Use your hydrometer to find your original gravity and record
9. Pitch your yeast and place airlock (and lid) on your fermentation vessel.
10. When signs of fermentation cease, after at least 14 days, rack your beer into your bottling bucket.
11. Add 5 oz priming sugar (or use priming sugar calculator) to 1 cup water and bring to a simmer. Allow to cool some, then add to bottling bucket. Stir gently with sanitized bottling wand.
12. Fill bottles and cap.
13. Store bottles at room temperature for 14 days.
14. Refrigerate overnight

IMPORTANT: The initial primary batch should be only 4.5 gallons NOT 5.5. This is because you will be adding a gallon of peach juice in the secondary.
Here is the process for calculating your ABV this way:
Take Primary OG and FG to calculate ABV as normal (POG, PFG, and PABV). Add the peach juice. Multiply the PABV by 0.82, because you've just watered it down.
Take the new OG for the secondary (SOG), and take Secondary FG after 2 weeks fermentation (SFG) to get Secondary ABV (SABV). Then add the PABV to the SABV to get your true ABV.
(PABV*0.82) + SABV = ABV.
You're shooting for around 5% when this is complete.
It should be noted that your IBUs will also go down, and should be multiplied by 0.82 as well, putting this recipe at around 20 IBUs
Recipe is best with pulp-free peach juice. First test batch lost almost 2 gallons in sediment due to peach pulp from the juicer.
The vanilla will be mild on this one because of the noticeable aroma and flavor of peach. Use two beans in the secondary if you want a vanilla kick, or just one if you only want a slightly creamier taste.

Notes: Slice 1 jalapeño and place in with the Mash.
Place 2 1/2 sliced jalapeños into the wort with 15 minutes remaining with the boil.
Roast 2 jalapeños to Carmelize sugars, then soak for 30 minutes in 2 oz Vodka - place these 2 jalapeños in secondary for 3 to 6 days depending on how much heat one wants.
The honey gets put into the boiling Wort at flameout.

Notes: This is a clone of a favorite (Fresh Squeezed).
Mash temp 148f-150f should result in a more complete conversion to simple sugars for fermentation so its not such a heavy IPA.
For Fresh Hopped flavor:
In the hop listing we add Citra at 0 min flame out for aroma and flavor. Let it Hopstand (I used whirlpool for lack of option) for 10 mins to add the IBUs.
After fermentation (give it 2 weeks) dry hop with Citra + Mosaic for another 5 days.
Transfer to secondary and cold crash in the fridge (if you can fit it) for 2 days or more before priming and bottling. |

Recipe was created for the wild card category of the brew contest... "beer with aromatic malt, turbinado sugar and cinnamon"
started with 2 gallons pre-boil. volume after boil was 0.8 gallons (lost 1.2 gallons to the boil.) Need to increase pre-boil volume to 2.75 gallons to end up with 1.5 gallons post-boil
measured OG was 1.080 after top-off
I will probably add a little wheat malt and/or oatmeal next time for a little more mouthfeel and head retention. Also suggest increasing (doubling?) the cinnamon, since I could not taste it. The 2 main "dings" on the scoresheet were
1. mouthfeel a little too thin.
2. cannot taste the cinnamon enough |
