Make lactobacillus starter. Dissolve malt and water, add lactic acid. Kettle sour with lactobacillus, then boil with just a touch of bittering hops. Ferment with US-05. Split and add raspberries, blackberries, passionfruit to some volumes.
Yeasts:
White Labs 677 Lactobacillus delbrueckii (make a ~2 L starter with DME and yeast nutrient)
(or Wyeast L5223-PC Lactobacillus brevis)
(or WLP672 Lactobacillus Brevis)
"The Lactobacillus Delbrekii that you can buy from the beer yeast companies is homofermentative, and Meyer feels this is less good than heterofermentative species like Lactobacillus Brevis, which is common on malted barley from the malting process itself."
But it seems whitelabs themselves think delbrekii is more suited. But people disagree! ugh.
Aim for 3.5 volumes CO2.

Dry hop in primary for ~5 days with Cascade hops - they sink to the bottom after releasing flavor.
This is one of my favorite beers, and since I can't buy it locally (outside of Seattle), I decided to brew it. |

Unplanned experimental recipe. Goal, to achieve a brew somewhere on the spectrum of saison-mead-ale
22 navel oranges juiced through Breville juicer. Est. 23grams sugar per orange (1.11 lbs), 46oz in volume.
Juice added at 10min to pasteurize

2lbs raw unprocessed honey added

(bubble 5sec intervals within 24hrs, so yeast still firing)

Bottled using 1/2cup of raw cane sugar
Tastes pretty good. Fairly sour beer, but not funky at all. Fair amount of residual flavor and tongue tingling from the orange peel and ginger.
As original gravity was not taken due to multiple additions of honey, the estimate above is 1.101
Final gravity 1.004, and it certainly feels boozy after a few drinks.

Notes: Based on a disappointing recent sample of Marble Ginger and a Twitter discussion with an ex-Marble brewer, I wanted to make something killer fiery so I doubled his recommended ginger additions.
Day 3 - Boil Honey with water and 5g dried ginger. Strained, cooled and add.
Day 5 - Rack to secondary, add fine sliced fresh ginger in bag, add some brandy to the dried ginger, stick it in a bag, add to secondary.
Priming sugar boiled with water and 5g dried ginger.

Notes: In a large soup pot, heat 3.4 quarts (3.2 L) of water to 165 °F (74 °C). Add crushed grains to grain bag. Submerge bag and let grains steep around 154 °F (68 °C) for 45 minutes. While grains steep, begin heating 2.25 gallons (8.5 L) of water in your brewpot. When steep is over, remove 1.1 qts. (1 L) of water from brewpot and add to the "grain tea" in steeping pot. Place colander over brewpot and place steeping bag in it. Pour grain tea (with water added) through grain bag. This will strain out any solid bits of grain and rinse some sugar from the grains. Heat liquid in brewpot to a boil, then stir in dried malt extract, add first charge of hops and begin the 60 minutes boil. With 15 minutes left in boil, add sugar, remaining hops, yeast nutrients and Irish moss. Then turn off heat and stir in liquid malt extract. Stir well to dissolve extract, then resume heating. (Keep the boil clock running while you stir.) At the end of the boil, cool wort and transfer to fermenter. Add water to make 5 gallons (19 L), aerate wort and pitch yeast. Ferment at 70 °F (21 °C). Rack to secondary when fermentation is complete. Bottle a few days later, when beer falls clear. |

1.5kg TC Amber Malt Extract
STEP 1: Mix
First crush malt grains and tubes of these in a saucepan with 2 liters of hot water boiled.
2nd Remove the pan from the heat, let it all soak in for about 30 minutes, then set the pan in cold water to cool down.
3rd Dissolve Light Dry Malt in the fermenter in 2 liters of hot water.
4th Add the strained, cooled with liquid chocolate malt in the fermentation vessel and ölsatsen English Bitter and TC Amber Malt extract and mix well.
5th Make up to 25 liters of cold water, stir very vigorously and add the yeast.
STEP 2:
Try to let the fermentation take place in the 18C to 21C.
After a few days of fermentation; add Fuggles and ECG pellets.
