Notes: Mash steeping grains at 156 for 45 minutes because of the flaked grains
I kid you not this was fermented at 62 and kept there for 6 days before raising it to 65 (a big you must do)this yeast is best fermented cold
I did filter this with a 5/1 filter combo so it might have changed the color lighter than it would other wise
this was a huge success, great summer beer medium body golden in color and smooth as hell, gotta name this great summer beer Ozarks Golden Ale |

Notes: For the late honey addition, I used a Chinese Lychee honey (Po Sang Yuen) 500g .
1) 2.5 Gal. Boil, Add Light LME.
2) Return to boil and add 1 oz hops.
3) boil 40 min.
4) Add DME, Cane sugar, and Rice syrup solids.
5) Boil 5 Min.
6) Add 1 oz Hops, and Wirflock
7) Boil 15 Min.
8) Terminate boil
9) Add honey (0 min.)
2 weeks Primary, 2 weeks bottle condition..

Notes: This is a clone of a favorite (Fresh Squeezed).
Mash temp 148f-150f should result in a more complete conversion to simple sugars for fermentation so its not such a heavy IPA.
For Fresh Hopped flavor:
In the hop listing we add Citra at 0 min flame out for aroma and flavor. Let it Hopstand (I used whirlpool for lack of option) for 10 mins to add the IBUs.
After fermentation (give it 2 weeks) dry hop with Citra + Mosaic for another 5 days.
Transfer to secondary and cold crash in the fridge (if you can fit it) for 2 days or more before priming and bottling. |

Notes: Brewed 08/02/15 using bottled water Swindon water is not good.
Steep 300g of Cascade at 65 degrees C for 30 mins prior to adding malt extract during the boil. Boil for 60 mins adding hops at correct times.
Add maple and honey with 15 mins left of boil.
Start SG 1065 at 20 C

Notes: Ref: Wiki Beer in Wales, an approximation of 14th Century Wales Ale.
Grains limited to 8lbs in a 4g boiling pot.
Don't 'squeeze' the grain bag to avoid sharp flavors; this is a more "bread-y style" from the historical transition from mead(honey) to agriculture(grains). Add all grains in 3g water at 160f, wrap in blanket for 1-2hrs, stirring every 20mins or so...iodine test for "doneness".
Liquid extract in the last 10 minutes of boil to keep SRM lighter.
Primary fermentation just 5 days at 60F (wrapped in a blanket)
Rack to secondary (5 gallon bucket with sealed lid*) to lightly carbonate in this "cask".
* Lid modified with a pick-up tube and valve such that Ale can be lightly carbonated and pressurized in the plastic 5g bucket for DIRECT serving. Yeast will re-pressurize the "cask" (if you don't drain too much of it in one serving). Siphoning to a Growler is also good to have in the 'fridge. A syringe can be used to "fluff" the head of the Ale in a glass (this was popularized with Guinness Stout for a time) Allegedly, Guiness has some history in Wales.....wiki
Forgive the Carapils; it provides longer lasting 'head' to compensate for the low, natural cask carbonation level.
The "Brown" gains are to achieve the Minimum SRM, since color is often darker than estimated when I brew....
