Notes: Starting with six different hop varietals added to the brew kettle & culminating with a massive dry-hop addition of Simcoe hops, Bell's Hopslam Ale possesses the most complex hopping schedule in the Bell's repertoire. Selected specifically because of their aromatic qualities, these Pacific Northwest varieties contribute a pungent blend of grapefruit, stone fruit, and floral notes. A generous malt bill and a solid dollop of honey provide just enough body to keep the balance in check, resulting in a remarkably drinkable rendition of the Double India Pale Ale style.

| Notes: I can’t quite put my finger on what went wrong during brew day. I was expecting a BHE of 69% or higher but ended up closer to 54%. This was my first time doing the Ferric acid rest at 110°. I did add the water salts before doughing in. Once recirculating at 150° for several minutes, I then checked PH and added a teaspoon of lactic acid. Upon rechecking the PH I realized I can no longer trust the ph meter, even after calibrating on brew day. For what it’s worth I got an initial reading of 5.5 then I got higher reading even after the one teaspoon of lactic acid. I did keep the element at only 50% but the boil didn’t seem too weak. I ended up at roughly 13 gallon post boil so I must not have had any where near the boil off I would expect. |

brew day went extremely well, hitting mash temps was easy w/BIAB. I underpitched tho. should have used 2 packets, and a starter. I pitched the second packet almost a week later. after 10 days it got down to 1.020
finished around 1014, way too much carafa 2, very smokey. but as the smoke clears its getting tasty |

had to dilute with bottled water to prevent a 10% beer. did so at 24 hours after yeast pitch. hoping fr no oxygen issues.
dry hopped on 5/8 6 pm with 2 ounces of citra
added 2 oz of super stinky simcoe on 5/11 PM
fg= 1.010 by hydrometer. whoa thats low.
tasted bitter af at kegging
beer is tasting very good with no issues besides the 15o IBU's. very tasty, tons of hop flavor. not a lot of aroma, but expecting that to come around a bit as it looses greeness. If it does not, I would start to wonder if a 180 steep may not be one of the most important things for making a beer that I like?
5/22 fully carbed and fairly clear. nice color actually. pretty tasty beer. bitter, dry, decent nose at this point. total west coast style, better than most commercial examples. |

Notes: 33l water, 23l strike, campden tablet night before
Pid and grain bed differ at high temperatures (eg at 68, bed was 62 ish. ) raised pid to 74 but that raised the water in the vessel to 72. Try +2 or 3 degrees next time.
Boil was stopped early as brix indicated high OG. however later brix was lower..... too late as hops and protofloc added .
Cooling took 1:10hr
Whirlpool fitting only just covered. need to brew for 25L FV in future.
Take out FB before boil....
Chiller is too tall for 56L vessel. sticks out. needs to be wider and lower.....
