Notes: 3 day dry hops are added to the fermenter at full 30L volume at 13°C. 0 day hops are keg hops added to cold beer when kegging; 100g in a 19L corny keg. This meant that I ended up with a corner keg of ultra hoppy beer ~12g/L and to mini-kegs of just really hoppy beer at ~7g/L.
This is a super tropical, pungent fruity beer with the aroma and flavour of over-ripe fruit. Smooth bodied but with a dry crisp finish.
Definitely one of the best hoppy beers I've brewed. |

Kept in garage with heat belt , temp past 86 max on fermometer strip. Dry hopped w/ nylon paint bag Jun 3, bottled June 8, squeezed paint bag and added 4.6 oz cane sugar, actually yielded 5 gallons. Put in garage next morning.

Notes: Bring to boil and add salt and coriander. Then cut boil. Cool to 95 degrees. Add Lacto. Let sour for 24-48 hours. After souring occurs, bring to boil. Chill to 70 degrees and pitch WLP644 Trois.
Let sit for 2 weeks.
1 liter of strawberry margarita/daiquiri mix.
Need Goodbelly Mango.
Add tequila-soaked wood chips a couple days before bottling. |
