Notes: Crystal 40L - <15% - Adds toffee and caramel flavor.
Flaked Oats - <30% - Adds a creamy mouthfeel.
Carapils - <5% - Adds body and head retention.
Ashburne Mild - <50% - Adds a golden color.
Golden Promise - <100% - Base malt for extra sweetness.
Maris Otter - < 100% - Base malt for nutty sweetness.
For 3-5 days, add 4 oz of Molasses and 4 oz of Maple Syrup.
2 Vanilla beans, pulped and left to sit in grain alcohol for 2 days. Pour entire mixture into beer. Let stand for 5-7 days.
1lb. Lactose for sweet milky flavor. Lean heavier than usual on this. |

Notes: This beer is designed to have a lot of dark fruit flavors like plum, fig, and raisin. Brown paper bags sometimes remind me of plums since we used to ripen plums in brown paper bags.
This was part of a group brew at Rob's house, this was my contribution. Came out a little stronger than anticipated, not sure how that happened. I made a 1.5 quart starter because trappistale yeast usually needs a little boost. I actually tasted the starter and it tasted pretty good itself. I should probably make a belgian pale ale with the same yeast at a future date.

Notes: Shred pumpernickel bread into small 1" pieces, lightly toast in over on baking sheet to firm and crispy texture. Pre-soak pumpernickel with 1 gallon of 150 F water for an hour, strain and separate from "bread juice". Add pieces of pumpernickel to mash and mash as usual. Use bread juice in sparge water. |

Notes: Mash at 156°F (69°C) for 60 minutes while constantly recirculating. Target 5.2 pH. Mash out at 168°F (76°C) for 10 minutes, then begin runoff and sparge. Boil for 60 minutes. With 15 minutes left in boil, add lactose and Oreo cookie pieces. Chill to 67°F (19°C), pitch yeast, and oxygenate for 90 seconds at a rate of 2 L/min. with pure O2. Ferment at 67°F (19°C) for 7 days, then raise temp to 70°F (21°C) and hold for 3 days. Cold crash to 33°F (1°C) and hold for 5 days. Force carbonate to 2.5 vol. (5 g/L) CO2.
Won the gold medal in Category #13: British & Irish Stout with an Oatmeal Stout during the 2019 National Homebrew Competition Final Round in Providence, RI, with the help of Jeff Rorison. Baas and Rorison’s British & Irish Stout was chosen as the best among 369 entries in the category. |
