Salt, coriander, lime zest last 10 min of boil.
3 good sized jalapenos (seeds removed) last 10 minute boil, roasted & soaked in vodka overnight before.
Co-pitched yeast with 4 x capsules Swanson's L. plantarum.
3 more jalapenos (seeds removed, unroasted) day 5 fermenter.
The hops is added once beer in fermenter reaches the desired sourness (by taste, I don't have PH meter). This stops any further souring.
This was the best beer I've brewed so far (12 brews). |

Notes: Mash low. Add lactic acid into the primary to counter the ph change by dry hopping.
Pitch yeast at 20C and keep it there for a 3 days, gradually bring up to 23C after that for 4 days. Verdant ferments quickly and after 10-11 days will likely be done.
(If possible do a day at 25C for a diacetyl rest - dry hops will add this due to tired yeast. ).
Crop yeast before final dry hop. Final dry hop drop down to 7c to keep the aroma. There may been a little increase in plato due to hop creep so keep it for 48h before moving to serving vessels. Then remove vegetal matter.
Ascorbic acid when added to mash and then at bottling/canning/kegging will hold off oxidisation. |

Notes: add 2 oz bourbon soaked oak chips after primary fermentation let age until bourbon flavor is desired..add more if needed
then add tart cherries...age until desired flavor is reached.
I primed with brown sugar for bottling
3rd time filed in a freshly dumped Bourbon Barrel from Dark Horse. Sat in barrel for 3 months light pellicle formed. Funky and boozy. Transfer to a bucket with 2lbs of Tart Cherry puree for a week then kegged. |

Notes: I had this sitting in my keg for 15 days just to meld the flavors together, I also used gelatin right when I kegged it and now after 15 days the beer is very good, you can defiantly taste the wheat flavor and the over all body is perfect with a citrus finish, the final gravity is low but the carapils makes the beer a little thicker and just the right texture, I can defiantly say this is a winner |

10 lb (4.5 kg) Gambrinus Pilsner Malt
HOPS SCHEDULE
4 oz (113 g) Citra [12% AA] at knockout
3 oz (85 g) Citra at dry hop
DIRECTIONS
Mash at 155°F (68°C) for 45 minutes. Boil for 90 minutes. Ferment at 55°F (13°C) with a diacetyl rest when fermentation is 70 percent complete (typically, at the end of the second day of fermentation).
To reduce DMS, collect only 4.5 gallons (17 l) in your kettle. Boil down to about 4 gallons (15 l) and then at knock out (with flame off), top up with 1 gallon (3.8 l) of chilled sterile water (a gallon jug of grocery-store water is best). This should bring your wort to 185°–195°F (85–90°C) and will get your wort out of the temperature danger zone where DMS precursors can redevelop.
YEAST
Fermentis Saflager 3470 (or similar yeast of Weihenstephaner origin)
BREWER’S NOTES
There are no bittering hops used in the recipe, as the large knock-out addition will provide enough bitterness. Target a mash pH of 5.3–5.4, with a wort pH of 5.15. |

I am trying to make a pale beer in the style of Corona with a well balanced but obvious new world American hop flavor. Not lawnmower beer more like beer you might have on the beach after a good surf watching the sun go down. ABV 4.5 IBU 22
Starter temp should be 25C for about 4 hours to get a better lift off
I used Wheatbix a supermarket cereal for the wheat component.

Notes: I did a test this time (will call it that) everyone has been sick , me no exception, very tired and lazy so wasn't prepared and didn't make the needed starter. so decided to pitch 3 wlp090 yeast and hope for the best, didn't use my fermenter in water either just put in a room where the air temp was around 65 and of course had to shake it twice yeast just dropped to the bottom then after the second day took off bubbling about every 1/2 second for 3 days and still going but now at about 1 second, the smell out of the airlock is of hops and some yeast, I call that good lol
update, I guess dry hopping would be better after all the hop flavor while not bad doesn't jump out at me and make me want another and another, will be keg hopping this one!, after keg hopping with the hops cascade, amarillo and simicoe all mixed together, keg hopped this for 1 day in the keezer with a course bag in 1 keg. I took the keg and filtered it with a 1 micron filter because the hops flooded the beer, then I mixed the 2 together and wala a very very dry hoppy but good tasting beer, this beer is higher in alcohol than I anticipated, I will definably be brewing this again |
