Notes: I did a test this time (will call it that) everyone has been sick , me no exception, very tired and lazy so wasn't prepared and didn't make the needed starter. so decided to pitch 3 wlp090 yeast and hope for the best, didn't use my fermenter in water either just put in a room where the air temp was around 65 and of course had to shake it twice yeast just dropped to the bottom then after the second day took off bubbling about every 1/2 second for 3 days and still going but now at about 1 second, the smell out of the airlock is of hops and some yeast, I call that good lol
update, I guess dry hopping would be better after all the hop flavor while not bad doesn't jump out at me and make me want another and another, will be keg hopping this one!, after keg hopping with the hops cascade, amarillo and simicoe all mixed together, keg hopped this for 1 day in the keezer with a course bag in 1 keg. I took the keg and filtered it with a 1 micron filter because the hops flooded the beer, then I mixed the 2 together and wala a very very dry hoppy but good tasting beer, this beer is higher in alcohol than I anticipated, I will definably be brewing this again |

Notes: Mash low. Add lactic acid into the primary to counter the ph change by dry hopping.
Pitch yeast at 20C and keep it there for a 3 days, gradually bring up to 23C after that for 4 days. Verdant ferments quickly and after 10-11 days will likely be done.
(If possible do a day at 25C for a diacetyl rest - dry hops will add this due to tired yeast. ).
Crop yeast before final dry hop. Final dry hop drop down to 7c to keep the aroma. There may been a little increase in plato due to hop creep so keep it for 48h before moving to serving vessels. Then remove vegetal matter.
Ascorbic acid when added to mash and then at bottling/canning/kegging will hold off oxidisation. |

Notes: 60 min. boil, then chilled to 70 deg. OH SHIT!! Somethings not right. I forgot to add the whirlfloc, Back to the burner for a 2nd time. Boiling again, got another hot break, and skimmed it off. Whirlfloc in for 10 min. then chilled to 70 again. (Hence the name) 2001 Wyeast Pilsner Urquell lager yeast in a 1 ltr. starter pitched at 70 degrees,air lock bubbling good @ 3 hrs, then to 50 deg. for 21 days. Raised to 60deg. for 24hr. diacetyl rest. Then 14 days @33 degrees SG 1.060 - FG 1.016 ABV 5.7 Waiting on the finished product for taste test.
Beer was the best I have made yet. My buddy who has always been a store buying, American mega brewery beer fool, had to be run out of my fridge. He is now on the craft beer train.
Pulled another bottle or three out and partook while watching football yestiddy. This brew started great, and just keeps getting better and better. DAYUM!! I think I'm turning Germanese, I think I'm turning Germanese, I really think so. |

This brew close to Graham Wheeler recipe for relatively low-alcohol best bitter from Black Sheep. Followed recipe quite closely, upping Challenger hop dose from 21g to 25g to compensate for relatively low AA content. Otherwise identical.
Noticed during mash that Braumeister 'fly sparge' was uneven, showing preferred channels through the grain pipe. Not seen this before and wondered if the thinner mash was responsible (at 5.85L/kg, it was significantly thinner than we usually do, with a target of ABV 3.8%).
Measured OG after mash at 1.040, indicating 65% efficiency despite uneven flow through malt pipe. Volume into fermenter was 20L and OG 1.042, projected ABV 4.0%.
Fermentation set-point 19C, actual T will be close to 19.5C.
FG 1.006 - adjusted attenuation to 83%. |
