Notes: Attempt #2 at making a Total Domination clone.
This is an enjoyable, slightly floral IPA. It is not Total Domination though. EDIT - this turned out to be a delicious beer that I'm very happy with, but I will continue to refine the recipe.
The grain bill on this is just about perfect. The hops are off though. Too floral, not enough bitterness. I'm going to add Simcoe as a bittering hop and as a late add, and cut back the amarillo/crystal additions by 25%.
The home brew store was out of Wyeast 1968 so I went with Denny's Fav 50 and I'm very happy with the clarity and flavor profile, leaves a bit of maltiness which is nice.

Notes: Traditional Norwegian farmhouse ale uses pale malts. Although wort is often fermented "raw" (that is, without boiling), this recipe uses a very short 10 minute boil to sanitize the wort and produce some bitterness from the hops.
The malt bill is adapted from my saison recipe. I also use Styrian Goldings hops in my saison, and since most Norwegian recipes I've found don't give much information (the closest says "any central European Nobel hop" should work), so, Styrian Goldings it is.
Except for this iteration (5/11/17), I'll be substituting Hallertau Mittelfruh, added to the mash, and Cascade and Lemon Drop added at the beginning of the boil and at 5 minutes. Remember, this is only a 10 minute boil.
This beer will be fermented warm (80F) with traditional Kveik yeast.
If I could add anything to this recipe, it might be some juniper branches.

| Notes: Zest one lemon and set the zest aside. Juice the lemon as well. Bring a gallon of water to a boil. Add the lemon juice. Process 10oz of fresh ginger root in a food processor. Add the ginger to the boil. Add lemon zest 10 minutes after ginger has been added. With 20 minutes remaining in the (hour-long) boil, you can add 0.2oz of lemondrop hops, although this is optional. At flameout, add yeast nutrient and energizer and allow to dissolve completely. Cool the wort to 170 Fahrenheit (77 Celsius) and add the honey, allowing it to dissolve completely while stirring gently. Cool the wort to 68F (20C) and add it to the carboy by pouring it through a filter (cheesecloth, muslin bag) to remove plant matter and aerate. Pitch Lalvin K1-V1116 and cover with an airlock. Rack in about two weeks when FG is reached, add priming sugar, and bottle. |
