After three weeks in the bottle, compared to a Former Tenant can dated 06/03/2018.
Appearance:
Colour is super close. The homebrew (HB) leans ever so slightly towards amber, while the FT has a genuine cherry red hue. Head on the FT is a more tan colour, compared to paler HB.
Aroma:
Not dissimilar! But there are distinct differences. FT smells of resinous pine, stewed fruit, ripe pineapple and dark Christmas cake. HB has a lighter, more green, tropical melon-fruit aroma, pineapple and passionfruit, and lacks the pine of the FT.
Taste:
Both beers are initially malty. FT has an early slightly sour acid, before rich palate-coating resin, big bread and biscuit and strong lingering bitterness. HB is sweeter, bitterness is similarly lingering but not as assertive up front, malt character a bit more restrained.
Overall:
Not a perfect clone, but the home brew is in the ballpark. I wanted to all-grain brew so I could make the beer I really wanted to drink, and this is almost as good as the real thing. I find the slightly more restrained, sweeter (but this is still a big red IPA!) character of the home-brew makes it easier to come back for more, but the FT is the beer that smacks you in the cheeks and makes you pay attention. I’m pretty stoked to have a couple of cases of this in store, especially when the FT is $13/500mL! |

Mash Water- Add the following:
Gypsum - 5g
Calcium Chloride - 1.5g
Epsom Salt - 3g
Lactic Acid - 1.6ml or 1.936g
Sparge Water- Add the following:
Gypsum - 4.8g
Calcium Chloride - 1.4g
Epsom Salt - 2.9g
Lactic Acid - 1.4 ml or 1.694g
Pre-Boil Volume = 7.75 Gallons
Add 10 drops Fermcap-S before boil
Add Whirlfloc tablets 15 minutes left in boil
If applicable, add Corn Sugar with 15 minutes left on the boil
Filter hops by putting a 5 gallon paint strainer bag into the primary and pouring wort through the strainer before pitching yeast
Rehydrate US-05 prior to pitching
1) Warm the dry yeast to room temperature
2) In a sanitized container, prepare 1/2 cup of sterile water at 95-105°F
3) Sprinkle the dry yeast on top of the water, trying to avoid setting up large, dry clumps.
4) Let sit 15 minutes, then gently stir.
5) When the yeast has reconstituted, gently stir again to form a cream and let sit another 5 minutes.
6) Carefully and slowly, adjust the temperature of the yeast to within 15°F of the wort temperature.
7) Pitch the resultant cream into the fermentation vessel, ideally as soon as possible. |

Although Click and Brew may not find the Abbaye yeast from Homebrew supply, feel free to use your favorite Belgian style yeast.

Nottingham Yeast specifies to not use Wort, distilled, or reverse osmosis water for hydration. Only clean, sterilized boiled water.
Nottingham Yeast specifies to at-temperate in intervals of 5° Celsius (41° Fahrenheit) before adding to wort. Shocking the yeast will risk petite mutation leading to long term or incomplete fermentation and possible formation of off flavors.
Quick Instructions:
1) Steep crushed grains for 10-30 minutes at 155°F
2) Add Malt Extract whil Pot if off the burner
3) Bring to boil - ADD 1.0 oz Northern Brewer bittering hops (60 Minutes)
4) Add 1 oz Saaz flavor hops for last 2-5 minutes.
5) Cool and add Yeast
6) Ferment and package (2 Stage fermentation is Recommended) |
