Notes: My homebrew shop was out of the regular American Ale so I used American Ale II and I was happy with the results.
For the orange I just sanitized the orange, took the skin off to get me 1 oz and threw it in with my Irish Moss.
It sat in my primary then I siphoned to condition for three weeks.
Kegged it at 8.2 and after 5 days it tastes great! It's a little more pale than a typical American IPA, but it's very drinkable--which is what I was going for. |

Notes: Another split batch: 5 gallons with T-58 and dry-hopped with 2 oz saaz; and 5 gallons with S-05 and dry-hopped with 2 oz of cascade.
Oats are toasted.
Brew Day Complete: Somehow ended up with more beer at a higher OG than planned. Efficiency up to 87% from 73% normally. First brewday since June - went very smoothly. Was trying for a mash temp of 156F to maintain some body in what was supposed to be a very low alcohol beer. Hit 152F but with a higher OG so maybe that will be ok. Will double the dry hop to 2 oz from the original 1 oz.
Day after brewing, T-58 has kicked in, S-05 has not. Sat on all ingredients for a month or more so am a little worried about viability. However, the T-58 was the yeast with the past best-by date.
Took a Refractometer reading 11/14 and got 5.1 for the S-05 and 6.3 for the T-58. The T-58 seems to be still working a little. Using the Brewer's Friend calculator that puts them at over 6% ABV. A little stronger than I originally planned, but that's ok. The small samples I pulled make me very optimistic these will both be great and quite different from each other. I am letting them ride for a couple more days but will keg on 11/19 at the latest to be ready to tap for Thanksgiving. |

Notes: ** Generally, I would use all Weyermann Barke Pilsner with some Munich Malt and maybe a bit of carahell. This was kind of a "use up the last of several sacks of grain" beer. That is why it is a weird combo of grains.
** This recipe is scaled to make 9 gallons of beer in a 10 gallon pot. I start with 9.5 gallons, boil it down to 8.5 gallons. I ferment in two 5 gallon corny kegs. Each Corny keg already has 1.25 gallons of preboiled, treated, chilled water. I brew the beer above gravity, bitterness, etc. knowing I will dilute it back down when I add it to the fermenter that already contains water. This allows me to brew 9 gallons of finished beer from one brew session. I usually only use this strategy when making lagers as it is nice to finish with more beer from the longer process and I can also fit 4 corny kegs in my fermentation freezer.
* I point this out because the volumes and amounts will likely look strange if you are trying to brew it. I would recommend going off of the percentages and scaling it to your system/volumes. |

Converted to extract because i am not setup for all-grain. Few alterations to the grain bill to accommodate the liquid malt in place of 2 row, and lowered the flaked oats to be more proportionate. Not making an oatmeal stout here...
chose an irish ale yeast because i was familiar with it from FRIZ, enjoy the flavor profile.

separate the cookies, scrape out the cream. liquefy the cream. Uncrushed cookies go in the boil at 20. Liquid cream (at room temp) goes in at 10. May amend to 5 to be with lactose.
I was warned the oils in the cookies may affect my head, so will have to watch for that. in future may look in to a way around this. was told simply not to use the cream, but we know that's not an option ;) |
