Notes: Punajuurten käsittely:
1. Kuori ja kuutioi punajuuret pieniksi paloiksi.
2. Paahda niitä uunissa 200°C asteessa noin 50–60 minuuttia. Tämä karamellisoi sokerit ja tekee mausta syvemmän.
3. Lisää puolet (750 g) keiton viimeisen 15 minuutin aikana ja säästä loput käymisastiaan.
4. Kun pääkäyminen hidastuu (n. 5–7 vrk kuluttua), lisää loput 750 g paahdettuja (ja pakastettuja/sulatettuja solurakenteen rikkomiseksi) punajuuria suoraan käymisastiaan.
5. Anna oluen levätä punajuurten päällä 5–10 päivää, kunnes väri on upean magenta.
- Sitruunaa tulee kahden sitruunan pelkät keltaiset kuoret (mahd. vähän valkoista kuorta).
- Inkivääri raastetaan pieneksi.
- Tarkista maun mukaan jos secondary punajuuren lisäyksen yhteydessä pitää lisätä vähän rosmariinia tai sitruunaa. |
