Notes: Full volume, no sparge.
Put kettle dip tube just above parallel at 2 o'clock position.
Add DME and dextrose at 30 min just before chiller added.
At end of boil, power off, chill to 170F, THEN add whirlpool hop additions, let sit for 30 minutes before chilling. Keep bag in until chilled to <68F, then remove bag.
Once chilled, remove chiller and cover x 60 min for cold break to settle.
Add clarity firm at yeast pitch
Ferment at 67F
On day 12 or at end of fermentation, add dry hops loose in FV x 3 days at 68F.
Then cold crash x 48 hrs, add gelatin for 48 hrs, then rack to sanitized and CO2 purged keg, add 5 mL Biofine Clear in gas port.
Chill x 4 days then pull off pint, then carbonate. |

Notes: "Greg's Classic Stout"
Surprisingly, a classic stout! If you like dark beer but shy away from the tanginess of Guiness, this brew is sure to peak your interest.
Don't use jet black roasted barley. Look for a deep dark brown colour roasted barley. Black or chocolate malt is no substitute when making a "classic" stout. Steep at 65-71C for 30 minutes then remove with a strainer.
Add gypsum for 60min boil (or don't add it).
Use English hops (such as Northern Brewer, Goldings, Fuggles)
Use Irish Ale type yeast (or English ale if you must). Aerate wort very well.
Enjoy within 3-4 weeks from brew day.
Consider swapping out some dark malt extract for additional head retention malt. |

Taste notes: Hops are incredibly smooth and tasty. Malty back-bone stand out and helps to highlight the fruity Galaxy hops.
Next time: increase bittering hops to 1 oz galaxy. |

Notes: I have another recipe based on New Glarus's Spotted Cow (in the clones folder), but I'm doing this one first because it's simpler and doesn't have any adjuncts which I don't think add anything anyway.
I typically don't like cream ale. It's a style that's trying to be an American lager with ale yeast. i'm making this more of an American Helles while still fitting the cream ale style guidelines which are very loose so it works out.
Originally I made this with SafAle US-05 which is probably the most legit yeast for American Cream Ale, but next time I might try it with 34/70 or K97. In the end it was very lager-like and clean. |
