| Notes: Sub Patagonia Especial Malt 140 for Special B. Fall is a great time for bonfires and beers, but it's also a disappointing time if you're a Cubs fan. And what better way to overcome the hangover from the long season than with a little Hair of the Goat. Smoky and rich, with a blend of noble hops for balance and flavor, this is going to be a great beer to share while commiserating the season gone by and look forward to next Spring. At Pro Brewer 1.5 pitch rate, 4 packets Nottingham for 44g; I chose Nottingham because it's got good tolerance to lower fermentation temps and because the required pitch rate would require multiple Wyeast packs and would be too expensive. |

this brew came out fantastic! couple execution items to clean up - didnt seem to clear out fully, and 2nd half of the keg had faint oxidation.
the hop combo was really nice, mosaic dominated and there was no bittering. next time consider going 2/3 centennial 1/3 mosaic

finally about to brew!
decided to go with corn instead of rice. adjusted the water profile. its a little high on calcium but should be locked in to the 1:2 cl to so profile adjusted from tap water.
thinking about mash hopping?? maybe not for this since lager yeast

i think i have the malt bill down, 80-20 pils to rice. would like to understand the difference between using flaked rice vs minute rice (any flavor difference? any price difference?) and also between flaked rice and flaked corn (flavor difference?)
also need to figure out water, im guessing i can use my west coast ipa profile
also need a plan for hops. what bitterness we aiming for. going fruity/juicy? or classic american hops?
will go with 34/70 at 68 degrees

Notes: Add rice syrup solids at start of boil and measure gravity. Alternative used flaked rice and compensate for the recipe difference and add with mash.
This recipe has been brewed many times and has wide appeal as a refreshing summer beer. Feedback from a lot of people trying it say change nothing but make it in bigger batches. This recipe is final.
The aroma and taste is of citrus, grapefruit, tangeringe, and a hint of lime. Bitterness is evenly balanced but is very smooth because of the late hoppinng strategy. The body is very light because of the rice and corn. The hops are the featured taste with some taste of the corn from the grain bill.
I use a full tablespoon of Biofine clarifying agent after fermentation is complete to speed up the process, clear the beer, and improve flavor stability. It makes this beer exceptionally clear and stable in the keg.
Carbonate this on the higher side of the style. |

Notes: Added cocoa powder with last hops, strained out. Soaked peppers in 1c vodka and added after fermentation was over, let sit for another week or two. Flavor was meh.
Puree habaneros in blender, add after fermentation is complete. New grains should have enough chocolate flavor, but if not maybe steep some cocoa powder in secondary for a while?

| Notes: First go at a Barleywine. I plan on making one every year and aging them. Bring a few bottles up for special occasions and saving the rest for several years. I brewed this on March 11th, transferred to secondary April 6th. I plan to age in secondary for a few months add some whiskey soaked oak chips for a month and bottle. I will then bottle age until March 2014. Tasting notes will be reported at that time. I had a problem with the yeast starter. I used wyeast old ale blend which contains brett. The yeast wouldn't ferment so I added the London Ale III to it as well. |

Notes: Good recipe for beginners.
Substitute hops: Cascade, Simcoe, Hallertau, Saaz.
If your water is low in mineral content, add 2 tsp of Calcium Chloride.
Steep the crushed grains in a grain bag for 45 minutes at 150F. Then boil for 60 minutes. Top off with cooled water.
Loosely based on The Brew Mentor's Easy Blonde, and a rusty memory of my first few extract batches that went well. |

Notes: Brewing Water: Distilled water with 1 ml of 10% phosphoric acid per gallon. ½ teaspoonful (2 grams) of calcium chloride and ½ teaspoon of calcium sulfate added to the mash per 5 gallons of finished beer.
Pre-acidify the wort to pH 4.5 with lactic acid.
Boil wort for 15 minutes, then cool to 100° F and transfer into Lactobacillus fermentation vessel, or leave in kettle if kettle souring.
Add probiotic drink Goodbelly, at a rate of 1 carton per 12 gallons of wort, and allow the wort to acidify to a pH of 3.45 to 3.5, which takes approximately 36 hours.
Cool wort to 65° F, oxygenate, and pitch yeast at an appropriate cell count. Ferment at 65° F for 5 days then add 3 pounds frozen Dragonfruit and 3 pounds mango Mango let sit for 5 more days then enjoy
