The LME I used is actually Maris Otter, available from Northern Brewer.

Steep grains in 5 gallons of 155 degree water for 45 minutes.

Rinse with 2 gallons of 170 degree water.

Add water into fermenter to make 11 gallons.

Keep CO2 at 2 volumes or less.
