Notes: During primary fermentation, split 2-3 fresh vanilla pods add into a glass jar with bourbon oak chips, add 50-100ml bourbon. Ensure glass jar has air tight lid.
After fermentation has finished, move into secondary fermenter. Drain bourbon - retaining vanilla beans & oak chips. Put chips & beans into hop bag, place in secondary fermenter for 5-7 days.
Optional: When kegging, split another 1-3 vanilla pods and add to keg.
Keg condition for 7-10 days before serving. |

Notes: Volume of whiskey used was just enough to cover chips in a small sealed plastic container. Half tsp of spices were sprinkled on the mixture midway through soaking, which was done in a cold environment for 12 days. Entire mixture was placed in secondary and beer racked on top. Spent 2 days warm and 3 days cold, then packaged. Could have gone a little longer but didn't want to risk spoiling the excellent flavor.
Actual FG was much sweeter than predicted (1.025), likely due to lactose and high mash temp plus lack of fermentables in some of the grist. |

Notes: Add DME to water (RO) as it heats to boil. Boil for 10 min only to sanitize, add whirlfloc at boil, then add salt and coriander at 5 min before flameout. Pre-acidify wort down to ~4.5 pH by adding 4 ml 88% lactic acid, then chill to about 100° F and then add Goodbelly shot. Cover/seal kettle and hold for ~24-48 hrs. Bring to a boil to kill lacto (add any hops here if you want a few IBUs). Chill to ferm temp and pitch yeast.
To experiment with flavor additions, post fermentation - split into five 3 qt amounts, each in a one gallon glass jug. Keep one as the base Gose, but add flavor (fruit/veg/herb/etc) to other four...

Notes: For the 3rd batch, don't have the Carahell, but need to use the yeast. Will swap in carapils, cutting it from 1 lb to 0.5 lb and see what we get. Will also make water adjustments to make it drier and up the bitterness another 5 -10 IBUS. Running out of perle so might swap in something there too.
The BBFKL did a really nice job on this beer. I fermented at 60ºF under 15 PSI. I felt it was just a touch on the sweet side so adding 5 IBU to balance that out, but to be. honest this beer disappeared faster than any other beer I've ever made. Upped the bittering slightly and also a little bit more sulphate. Still not 1:1, but closer.
First time I made this I did a triple decoction as the recipe called for. It was a very nice beer, but a ton of effort. Gonna emulate that with some melanoidin and call it a day this time.
Also, using Bootleg Biology's Frakonian Keller Lager Beta culture from August 2022.

Notes: Add half the gypsum to 3.5 gal of water. Heat water to 145 degree F (62.5 C) water and mix well. The temperature will stabilize between 130 and 135 degrees F (54.5-57 C). Add heat if necessary and hold the temperature at about 133 degrees F (56 C) for 30 minutes. Don't worry about a 3- to 5-degree F (2- j C) temperature drop during this time.
Raise mash temperature to about or just below 155 degrees F (68 C). Hold at 149 to 155 degrees F (65-68 C) for 45 minutes, stirring occasionally.
Complete conversion by raising the temperature to 158 degrees F (70 C) and holding for 10 to 20 minutes or until an iodine test indicates complete conversion. Then add more heat to raise the temperature to 167 degrees F (75 C).
Sparge with 3.5 gallons (131) of hot water at 170 degrees F (76 C) (add the other half of the gypsum to the sparge water). The volume of the wort before boiling should be about 7.5 gallons (21 I).
Bring the sweet wort to a boil and add the rapidura or invert sugar and boiling hops and boil for 50 minutes. Add the Irish moss and boil for 5 more minutes. Then add the aroma hops and boil a final 5 minutes. Cool the wort to about 70 to 75 degrees F (21-24 C).
The final primary batch size is 5.25 gallons (20 I). If necessary, add additional cold water to achieve this volume. Add yeast when the temperature of the wort is about 70-75 degrees F (21~24 C). Preferably ferment at 70-72-degree F (21-22 C) range for about 4 to 6 days or until fermentation is complete and appears to clear and darken. At this point, transfer the beer into a secondary fermenter and add the 1/2 ounce (14-gm) Kent Goldings hop pellets. Let the fermentation complete and settle in the secondary for 7 days. For best results, secondary "cellar" or age at 50 degrees F (l0 C) to help drop yeast out of suspension, but this is not at all crucial to the quality. Bottle with corn sugar. Age and carbonate/condition at about 70 degrees F (21 C).

Notes: Steep grains at 150-158 in a gallon of water for 30 min.
I have not made this recipe yet.
Ideas from Beersmith article on Oatmeal Stout.
Simpler version: Dark extract (which has 3% black and 13% C60), choc, oats, and 2-row
Midwest uses dark extract, 8 oz oats, 4 oz choc, 4 oz RB, 1 oz Fuggle in 5 gallons, but no 2-row.
