Notes: This is somewhat complex but it - the original - is one of my favourite commercial beers. I HOPE this works out as I have yet to brew it but it follows other similar clones of the same beer. I tried to balance strength, maltyness and colour with enough bitterness to make it work. |

Will throw in dregs from a Cuvee Rene and a Tilquin Oude Gueze a L'ancienne.
4/18/2016. grav: 1.018. smell is kind of sulfurous, mildly reminds me of rotten eggs. taste is moderately sour, flavored like a lemon. might do well with some kind of citrusy dry hopping.
9/10/2016. grav : 1.016, smells kind of musty, with a tad of funk. not as sour as other 2 beers, taste has some funk and a straight forward mild acidity, no longer picking up much lemon.
12/22/2016: grav: 1.015, very buttery, kinda sour. no sulfur. |

Notes: Perform a protein rest at 120°F (49°C) for 10 minutes and a saccharification rest at 154°F (68°C) for 60 minutes. Mash out at 168°F (76°C) for 10 minutes. Boil for 90 minutes. Ferment at 68°F (20°C) for two weeks. See the article text for brewing tips and more specifics.
Suggested pumpkin preparation: Prepare your pumpkin by putting it in a separate pot containing about one gallon of water, stirring it to make sure it is fully dissolved. Put the grain in the main mash vessel, mix, then add the pumpkin/mash water mixture.
After two weeks, raise the temperature of the saison to 78°F (26°C) for a few days.
Secondary fermentation for 2-3 weeks.
Add pumpkin pie spice during kegging process for Pocahontas Pumpkin ale. Do not add pumpkin pie spice to Saison D’Potiron. |

Chill the wort down to 44º (7º C) and rack beer away from the bulk of the cold break material before oxygenating and pitching the yeast. Warm the fermentation chamber slowly over the first 36 hours to 48 hours to 50º F (10º C) and hold that temperature for the rest of fermentation. This results in a clean lager, with very little diacetyl.
Carbonate to 2.52 Volumes of CO2. |

(5 gallons/19 L, all-grain)
OG = 1.040 (10 °P)
FG = 1.010 (2.5 °P)
IBU = 38 SRM = 33 ABV = 4%
Ingredients
6.0 lb. (2.72 kg) British pale ale malt
1.75 lb. (794 g) flaked barley
14.0 oz. (397 g) roasted barley (500 °L)
7.75AAU Kent Golding pellet hops (1.55 oz./44 g at 5% alpha acids) (60 min.)
White Labs WLP007 (Dry English), Wyeast 1098 (British Ale) or Danstar Nottingham yeast
Step by Step
I use Crisp Malting's British Pale Ale malt (made from Maris Otter) as my base grain, but other malts of a similar nature should work well. The roasted barley and flaked barley I use is from Great Western Malting Co. Feel free to substitute any high quality product of a similar flavor and color from a different supplier. My hops are in pellet form and come from Hopunion.
In this recipe the roasted barley is milled normally along with the other grains. Dough-in targeting a mash of around 1.5 quarts of water to 1 pound of grain (a liquor-to-grist ratio of about 3:1 by weight) and a temperature of 152 °F (67 °C). Hold the mash at 152 °F (67 °C) until enzymatic conversion is complete. Infuse the mash with near boiling water while stirring or with a recirculating mash system raise the temperature to mash out at 168 °F (76 °C). Sparge slowly with 170 °F (77 °C) water, collecting wort until the pre-boil kettle volume is around 6.5 gallons (24.4 L) and the gravity is 1.031 (7.8 °P).
The total wort boil time is 90 minutes. Add the bittering hops with 60 minutes remaining in the boil. Add Irish moss or other kettle finings with 15 minutes left in the boil. Chill the wort rapidly to 69 °F (21 °C), let the break material settle, rack to the fermenter, pitch the yeast and aerate thoroughly.
Ferment at 69 °F (21 °C). Slowly raise the temperature during the final 1⁄3 of fermentation by 6 °F (3 °C) to reduce diacetyl levels in the beer. When finished, carbonate the beer to approximately 1 to 1.5 volumes and serve at 52 to 55 °F (11 to 13 °C). |

Notes: Starting with 90 minutes left in the boil, begin slowly and evenly adding hops to the kettle. (This works out to a little over 0.25 oz of hops every 7.5 minutes.)
Start fermentation at 71 °F (22 °C) and let raise to 74 °F (23 °C). Dry hop in secondary at 71 °F for 3–5 days, then cool to 32 °F (0 °C).

Notes: A light, crisp Duvel-style Belgian strong ale. A Sotalien/Kronstad Bryggerier cooperation, jan 2015.
Fermentables "German" is standard German pilsner malt.
Sugars(cane and candi),boiled in 2l water added after height of primary ferm(44 hours after pitching). Due to fermentor capacity; about 40% of yeastfoam harvested/removed.
Priming and bottle fermentation with rehydrated safale 05. (recommended 1 mill cells/ml/plato), approx. 24 bill cells/1.5 gram of yeast. Plus priming sugar.
Note: This turned out to be one of our best beers ever. After about one year, it had a very smooth and complex taste. So most likely, this beer is suited for storage at least up to 12-14 months, probably longer. And it's worth the wait.
Final Gravity at 12, after long ferm.(Duvel is 7 or 8.)
