| Notes: The idea behind this beer to is brew a farmhouse style Saison but using sourdough starter instead of another form of saison or ale yeast. I have been an avid bread baker for a number of years now and have a fairly strong starter. I have the starter being fed on pre boil wort for some time now to become accustomed to very high sugar content. |

| Notes: halve the pumpkin, remove the seeds, and cut the halves into pieces about 6 inches (15 cm) long. Cover some cookie sheets with aluminum foil, arrange the pumpkin pieces on the cookie sheets, and sprinkle them liberally with brown sugar. Roast in the oven at 375°F (190°C) until soft. This usually takes two to three hours. During roasting, the brown sugar will melt and caramelize onto the pumpkin, providing extra flavor. Remove the pumpkin from the oven and let cool. Then peel off the pumpkin skin, dice the flesh into large cubes (being sure to save the juice for its color and flavor), and store in a covered bowl in the fridge. On brew day, let the pumpkin warm to room temperature and put it in the kettle for the duration of the boil. (As an aside, for those who are into sustainable brewing, the boiled pumpkin flesh makes excellent pies.) To avoid a mess in the kettle and clogged valves or siphons, put the pumpkin into either a large fine-mesh bag designed for fruit or a hop spider equipped with a paint-straining bag. |

Notes: Hops alpha acid for Mt Hood adjusted down based on age, see http://brewerslog.appspot.com/HopAlphaCalc.
Mash: heat 4G strike water to 164, targeting 149 degrees. Heated from 142 to 150 late in mash (20 minutes). Final volume after boil 4.8 gallons; took gravity and added .5G, gravity is right on.
No activity after 12 hours; moved upstairs to start (~65 degrees).
PLAN:
Ferment until activity has slowed in basement then move to upstairs closet to clean up.
Rack to carboy and lager for 1 month after fermentation is complete. |

Notes: Fermented with whole packet of 2 year expired Fermentis WB-06. Added QA-23 packet for a few days (didn't seem to do anything). Pitched Wyeast 3278 Lambic Blend (28 May, 15 mfg date), and White Labs WLP655 Belgian Sour Mix 1 after crashing, racking, then bringing back to 64 F.

Tried this after two years in the basement. Still had some nasty pellicle on top. Didn't suck much of that through. Served at my buddy Jon's 30'th birthday party and it was a hit, with everyone really. It was only mildly sour and wasn't that funky. Definitely a crowd pleasing sour beer. I would make it again, but next time split the batch into one that was only fermented with sour culture and one that had sour culture pitched after a primary fermentation with regular yeast. |
