Notes: My first Brut IPA, I'll see how it goes!
The last dry hop was done in the keg after packaging.
Based on https://web.archive.org/web/20210124130709/https://www.whitelabs.com/recipes/ales/brut-ipa with the hops changed to Nelson Sauvin because I think the flavours will go good with a brut IPA.
I'm only doing a 13l batch so 5ml (half vial) of Ultra-Ferm is fine. I have tested it on another batch and adding it to the fermenter works great. You might need more for bigger batches but it might just take longer. |

Notes: Grain Notes - German Wheat Malt is actually Oak-Smoked Wheat; Canadian Honey Malt is actually Gambrinus Honey Malt.
Peaches should be halved and roasted on low over a charcoal grill for 1.5 - 2 hours, or until significant caramelization from Maillard reaction. Use foil to shield from being seared outright. Once off the grill, smash with a sanitized masher in a sanitized bowl, cover with sanitized foil, and chill. Add to Secondary when ready. |

| Notes: Lost 1.5 gal due to efficiency of equipment. IG matched target (1.071). Yeast value adjusted, dry hop values remained the same. Jolly ranchers lowered FG to 1.010. Final ABV expected to be 8.0-8.5%. If scaled up proportionally to be 5.5 gal, then dry hop values must increase along with grain bill and water. |

Notes: First try at all grain BIAB and I am a little disappointed in the 44% efficiency I hit. I started with 6.5 gallons of water in my kettle with a plan to sparge with 1 additional gallon. Definitely seems like I had too much grain, and with the addition of .5 lb. of rolled oats, the grain turned into a big ball of goo.
I dropped the grain bag in at 165 degrees and, to my horror, watched the water temp drop to blow 140. I had temperature readings all over the place, depending on where I stuck the thermometer. The water could not adequately circulate through the grains. I stirred it as much as I could before closing the lid and letting it sit for an hour.
Lessons learned:
16 lbs of grain is too much, unless you have some way to vorlauf.
Rolled oats should be reserved to smaller grain bills
Brew day: 08/27/18

Quick chilled the first bottle tonight - 8 days after bottling and the carbonation is almost perfect. The beer turned out excellent! Fruity aroma with hints of peach, just the right amount of bitterness to complement the malts and up front hops. Could not be happier with this final product! Cheers! |
