(16 g) Crystal 3.5% AA @ 10 min. WATER When using water with high alkalinity, you can reduce total alkalinity to 5150 ppm as CaCO, by adding distilled water. Add calcium salts to reach total Ca? levels of 100-150 ppm. Sulfate-to-chloride ratio should be close to 1:1. YEAST German lager yeast, 34/70 strain ADDITIONAL ITEMS Lactic acid or sour wort should be used in the mash and toward the end of the boil to target pH 5.40 and pH 5.20, respectively. BREWING INSTRUCTIONS Adjunct mash: Mill the grains. (12,5 L) of 167°F (75°C) strike water with (1,6kg) of the six-row and all the corn. That should bring the mash to about 154°F (68°C). Rest 15 minutes. Boil for 15 minutes to gelatinize the corn starch. (If using a direct fire kettle, continuously stir the adjunct mash to prevent scorching.) Main mash: As the adjunct mash approaches 200°F (93°C), start the protein rest by mashing in (in a separate vessel) the remaining (6.8 kg) of six-row malt to hit a mash temp of 120°F (49°C). Once the adjunct mash has finished boiling for 15 minutes, combine the two mashes. Once combined, the total mash should reach about 149°F (65°C) (if needed, apply heat to hit this temperature). Rest 30 minutes. Then raise the temperature to 155°F (68°C) and rest 30 minutes. Raise to 168°F (76°C) and mash out. Boil: Boil for 70 minutes, following the hops schedule. Fermentation: Chill to 50°F (10°C), aerate the wort, and pitch the yeast. Ferment at 50°F (10°C) until gravity reaches 1.024 (6.1°P), then raise the temperature to 54°F (12°C) for 7 days. Chill beer and rack off the yeast. Conditioning: Lager at 31°F (-0.5°C) for 1 month. Carbonation: Carbonate to 2.8 volumes (5.5 g/L) CO,: ADDITIONAL NOTES If using whole-kernel corn, you must grind it finely with a mill that can handle corn's hardness. Don't try milling corn with a malt mill. Feel free to substitute flaked corn for whole kernel. It just might not taste quite as good!
