Jeg kokte opp vannet, hadde i 3 kg honning og kokte det opp igjen. Lot det koke i ca 1 min. Deretter kjølte jeg det ned til 25° før jeg hadde gjæren i.

Notes: -Water Chemistry figures were suggested by a profile BF offers for a light and hoppy beer, and produced by inputting the mineral figures on the bottle plus 1 TBS epsom salt and 2 TBS Gypsum.
- Mistake. I forgot to put in half of the pale malt and had a temp of 69-70 and watery mash for 15-20 minutes as I waited for it to cool. I then saw mistake, added rest of malt and had mash temperature of 64. Mashed for 60 min from there. GOOD NEWS. At end of mash, temp was 64-65c, so seems okay.
- 60 percent bright tablet
- Mistake. Sparge water was only 65c, so without thinking I dumped 1.5 litres hot TAP water into sparge, so no longer 1--% spring water.
- Preboil gravity 1045. Start vol is 37 ltrs. Need to boil of 4 litres to have 33 litres and target OG of 1050.
- Hopstand- didn't bother cooling, just wanted a few minutes, chucked hops in, stirred and left for 30 minutes with no further stiring.
- OG 1050, 67% efficiency.
- Poured wert through large mashing bag and into fermentor to catch trub and this worked well.
- bottled on day 6. 145 gr sugar for 25.5 litres at 16c to produce 2.4 co2
- fg 1011. 5.1 abv. Hoppy . bitter and the residual sweetness I have been looking for. very promising at tasting. Good clarity as well. Liberty bell rocks. |

Split the whirlpool hops; adding half at flameout. The other half once down to 165F.
Dry Hop in Two stages - 4 days each, split the dry hops in half also. Add the first half to primary. Stage one 8/29. Short .5 centennial, switching 1.0, increasing Apollo by .5.
10 day fermentation (63-64F at first, then ramp up to 68-70F once fermenation slows.
8 day, 2 stage dryhop in primary at 68-70F.
Rack to secondary and 4 day cold condition in the secondary at roughly 39F (basically refrigeration).
Force carb and drink 3-4 days later, or bottle and drink 1.5 to 2 weeks after priming.

As you can see, the layout of this calculator looks incredibly similar to the snapshot of the brew sheet.
Here are the results for 6 gallons: (Keep in mind, the Alchemist reportedly uses "Plaster of Paris" instead of Gypsum. Also, homebrewer lactic acid is typically 88% strength vs. the 85% version shown here).

I supplied two different results (in color). Notice the difference when using Calcium Sulfate Anhydrous (Plaster of Paris) vs. Calcium Sulfate Dihydrate (Gypsum) that must be used to hit 750 mg/L.
The information when whittled down, lines up... 6 gallons, approx. 21.6 grams plaster of paris, 1.2, grams calcium chloride, and then adjust mash pH to 5.1-5.3 with lactic acid. |

Mill grains and dough-in using RO water until a medium thickness mash is achieved. Treat mash with 1 tsp calcium chloride. Hold mash at 152 °F (67 °C) until conversion is complete. Sparge slowly with 170 °F (77 °C) RO water treated with 2 tsp phosphoric acid, collecting 6 gallons (22.7 L). Bring wort to a boil.
After the hot break, add the first charge of bittering hops. Boil for 60 additional minutes, adding the other hops per the hopping schedule. Allow the wort to rest for 5 minutes, then chill rapidly to 65 °F (18 °C). Rack to fermenter, leaving break material behind. Oxygenate, pitch the yeast, and ferment at 68 °F (20 °C). Fermentation should be done in less than a week, but don't rush it.
After the yeast has mostly settled, prepare a secondary fermenter (carboy). Blow in some CO2 to displace any oxygen, add the dry hops and rack the fermented beer on top of the dry hops, minimizing splashing. Leave the beer in contact with the hops for a week.
Rack to a keg and force carbonate, or rack to a bottling bucket, add priming sugar and bottle. Target a carbonation level of 2 to 2.5 volumes.
Variation: Add 0.5 lb (0.45 kg) Orange Blossom honey in the last 15 min of the boil. |

Notes: Wow! Over 100 participants in the Yeast selection survey! That's pretty awesome! Here are the results. So the Chico strain won by a mile and the medium of choice was US-05 dry yeast. The temperature consensus was 66F/19C. As a practice, I always double pitch dry yeast and I always ramp up to 70 after fermentation to allow the yeast to clean up. So I will be doing that on this recipe as well. Here's what the recipe looks like:
