- S-04 (x2 packs) dry pitched at 19C, started bubbling by next morning.
29/5/21 - SG: 1011
31/5/21 - SG: 1010, added 250g whole coffee beans (Evolve house blend) and 30ml of cacao tincture before chilling to 10C.
3/6/21 - Cold crashed to 1C, tastes sweet, looks pretty pale, a little bit of a alcohol heat maybe from the vodka(?)
24/6/21 - This has a huge coffee hit, the boys from the café loved it. A bit too much ABV and coffee for some, dial both back next time.
3/9/21 - The coffee is still really upfront, it does have the stout flavour with the really light colour, sweet with a medium body it's an interesting beer that was cool to try.
Substitutions:
Maris Otter (Floor Malted) used.
Notes:
Unusually low volume, next time mash 32.5L as it was pretty stodgy. Boil time cut to 40 min to compensate for low volume.
This has a big coffee hit, next time dial the beans back a little.
Cacao nib extract made from; https://www.maltosefalcons.com/tech/cacao-nib-extract-drew-way (200ml vodka and 100g cacao nibs soaked for 4 days then filtered)

While I don't question Charlie's use of Pilsner as a base, I really detest that malt. So I'll likely use American Pale Ale, or Golden Promise instead.
Unfortunately, his recipe in that link is not precise on the yeast strain. (or even if it is an Ale or Lager) The style can be made with either. My guess based on the fermentation temp is he brews this as a lager but could be a cold fermented ale. But his FistBump yeast seems to be a hybrid, so it might not matter. (a.k.a. WLP862 CryHavoc)
The calc shows the color way lighter (like an amber or brown) than a porter.
Hallertau can be subbed with Tettnang or Spalt. Bullion can be subbed for the Cluster. (the point is to use a very low aa% home grown or heirloom hop)
I'll brew this as-is (even with Pilsner) one time, but then likely start adjusting to hit style and to my taste buds.

- Gladfield Med Crystal (0.45kg) in for Crystal 40 (0.57kg)
- Added 2kg ale malt to add ABV and body but not much flavour.
- Rolled oats added for body, mouth feel and head retention.
- Chocolate malt (145g) upped to 200g total split light/dark.
- No Whirlfloc to try and keep body.
- No starter used.
13/8/18 - SG: 1020, tastes of sweet chocolate, FG is a bit higher than expected maybe use a starter next time.
- Added 2 vanilla pods soaked in bourbon for months.
16/8/18 - FG: 1020, tastes freaking great, dark chocolate flavours, cold crashed.
18/8/18 - Carbed and kegged, 30psi for 2min 20sec.
8/9/18 - Tasting great, lots of chocolate flavour, not too sweet, perfect body for the ABV, very positive feedback. I will make this again, maybe throw some flavours at it.
